what is the english name for gongura leaves?????
what is the english name for sooji??? Is sooji the same as rava???

also what is panneerr???? how can we make it? is it available in the grocery store in a form we can use for indian cookery?

sooji == rava in tamil, semolina in English.
The standarad semolina you get it is slightly finer than the rava we are used to in India. I have heard another thing called semolina flour but
i dont know if there is a connection. Also the north african cousine used couscous which is very similar to rava but it is coarser. So you can mostly substitute rava for recipes that call for couscous.
Panneer: Tamil Rose Water. I am sure you are not talking about this :-)
Panneer: Cottage Cheese. Usually not available in american grocery stores. Someone told me there is a difference between cottage cheese and panneer. Indian grocery stores in US sell panneer both fresh and frozen.
Gongura leaves? no idea. If you can get the biological name for it then we can see if it is known by any other name elsewhere. Hope it is not spinnaachanous gonguralous :-)

an easy and readily available substitute for panneer is tofu.
panneer is made by fermenting milk by adding lemon juice and let it dry in a muslin cloth. but it is better to buy it readymade:-)

I believe gongura leaves are called as "puLichcha
kIrai"in tamil.May be this can help to find out
the english equivalent!

growing gongura in the States could end up
being a nightmare.Some 8 or 9 years ago in the State of Tennesse a telugu family who grew gongura
got raided by the authorities!!

The andhrites make gongura chutney with gongura leaves. Wonder if a telugu person can give the english name for gongura leaves. Thanks to all of you for your response

You can also use Ricottta cheese as a substitute
for panneer. It comes out pretty good. No
complaints so far.

There seems to be a mix-up about panneer.
Panneer in Tamiluseage is common rose water. It is actually 'pani neer' which got transformed into 'panneer'. It was originally mountain dew, condensed and collected in silver vessels.
Rose petals were immersed into it and left.
That's how it was prepared.
This panneer is different from aththar which is the essense of rose.
The residue of lime-added milk is also known as channa. It is used for preparing rasagulla, chandesh and kalakan.
What language is the word 'panneer' used to mean curdled milk?
No Tamil dishes made from channa. The clear water remaining after channa gets separated, is known as 'whey water'. This was given to patients suffering from certain diseases according to Naattu Vaiththiyam.

Gongura leaves are the leaves from the Amarnath plant. In the olden Aztec days the indians used Amarnath flour for everything. You can purchase the Amarnath flour in Health food store and you can usually get the red variety of gongura in Indian grocery stores during the spring/summer time. Hope this helps!

Gongura's scientific name is Hibiscus Cannabium and it's related to Marijuana (Cannabis). It's benign unlike its notorious cousin, but I always wondered why I love Gongura Chutney so much!

Rava is called "cream of wheat" in America. It is generally found in the breakfast cereals aisle in the grocery store. THere is an instant version which i would not recomend for any one using it in Indian food.
Paneer can be made by adding lime to warm milk the whey and the milk solid separate. after that hang it in a cloth till no water seems to drop from it. Flatten it out and with the clioth still around it put it into th fridge with a heavy weight on it. Tofu is a good vegan substitute but paneer taste much better.

The Tamil name for Gongura is Pulichcha keerai.
The English name for rava is Cream of wheat. It is the closes to the rava in taste and texture.
Semolina or couscous is more like the gothumai ravai (the brown kind we get in India)
