As we are going for a tour, I wanted to make chappaties /roti for 5 days and carry in the zip lock cover. Will this help me to keep the roti in good condition untill 5 days? I have to carry food for my mother in law without excuse as she cant take outside food. I heard that North Indians make roti's for even a week and carry them. They say that it remains soft untill then.
SO , IT WOULD BE GREAT IF ANYONE CAN GIVE ME TIPS ON HOW TO KEEP THE ROTI OUTSIDE IN GOOD CONDITION FOR ABOUT 5 DAYS

hi all,
If u really want a very very soft and tasy chappaties...use a little bit of soya flour(u can get it every where) and use little milk too while making the dough. Oil is not necessary. soya flour is very healthy full of protien...and hence u make a healthy chapathies.

Thank u soooo much for the tips. I tried using soya bean flour as us said....the chappati is just soft like cotton. I dono how to thank u...and moreover by adding this, there is no difference in the /or better taste of chappaties.
And moreover, I am happy that we are eating healthier and tastier chappaties than before.
My husband loved that chappati and he conveys his thanks to u.

I tried using soya bean flour as u said but it's not soft what's wrong?
can u tell the correct proportion

I know how to do soft chappaties, but I need to know if there is any way to keep them good for 5 days....do any one know?

Hello AJ,
If you want long lasting Rotis, you need to disinfect water for dough and Flour.
This you can achieve by using Hydrogen peroxide 3 percent.
Add 10 ml of Hydrogen Peroxide in 1/4 liter of water of Dough.Then use this water immediately for kneading dough.
I have worked a lot with Dairy and Bread industry so I know the trick.
Try and let me know. Use only food grade Hydrogen Peroxide.

Do we have to use such strong chemicals? In India one often sees North Indian travellers carrying chapatis in trains, do they use chemicals?

Hello,
The emphasis is on increasing the shelf life.Hydrogen peroxide is a strong chemical if you touch it, but it immediately releases nascent oxygen and that oxygen destroys bacteria and fungus /yeast spores.What is left of the Hydrogen peroxide after ten minutes in dough is water.
So please do not worry.
If you get Sanosil which is a H2O2 + silver compound, it is still better.
H2O2 is available with any chemist/Drug store.
In India, the Rotis in normal condition can last not more than two days.In Northern region, where the atmospheric humidity is less than 30, the rotis can last till they become DRY WITHOUT FUNGAL GROWTH.

I don't think people carry normal chapathis for long journeys.
Pepper rotis can last a long time without any referigeration.

I saw the apparatus in an indian exhibition. if it is not available, try an egg poaching apparatus. u can make 2 idlis at a time in that. it takes only 45 seconds, so u can make many in a short time.

I am a north indian and we never carry chappathis for 5-6 day. only 2 days max. in trains also we make paranthas, which last a bit longer. try making paranthas instead.

A north indian friend showed me a chappati, which was very dry, as if it was roasted and was brittle. This type of chapatis last for even a month, i was told. I tasted them, they are nice.
He told that in sowcarpet, this type of dry chapatis are available. Mostly it is the Jains who buy this as they have some religious rule which forbids the pious to take food outside.

What you are refering to is known as KHAKHARA.
Yes you can get KHAKHARAS at sowcarpet .One is Novelty Tea House and another is Mehta sweets. Both the places you get Khakharas.

Hi,
Khakhara is easy to make also, but a little time consuming. But is more like a snack and not eaten like chappatti.
