Rice for Dosas

I've been making dosas at home for some time now. I've just used regular white rice with great results. Am I really missing out if I do not use parboiled rice? What did people use before parboiled rice was available?
Also, has anyone here tried using brown rice to make dosas? If not, I'll go ahead and try it this weekend and let you all know how the dosas turned out :).

tommy, if u are getting good results just using- white rice and ur enjoying the dosa, then u should stick with the recipe u've. No clue what my ancestors used! :(
No harm in trying out with difft. rice, if u like to experiment, through trial/error u'll learn!

Hi, In olden days, when parboiled rice was not available (or was not suppose to be used at home), people used to wash and soak a handful of poha(Aval in Tamil, Beaten rice in English I guess) and add it to rice and dhal mixture while grinding. The only effect of adding parboiled rice or poha is it helps in good fermentation.

Using the parboiled rice makes the dosas brown and crispier. In USA, when we did not get the parboiled rice in the earlier days, we used to grind little bit of cooked rice or we added Uncle Ben's rice powdered and made into a paste and then mixed it to the dough.

Now a days idli rice is available in Indian stores.soak 4 cups of idli rice and 1 cup of urad dhal(along with 1 teaspoon of methi seeds),make dosa or idli,very tasty,dosa will be slight brown color due to methiseeds.

I want to know whether we can make crispy dosas using only parboiled rice .I heard that we have to mix equal quantities of raw rice with parboiled rice to make dosas..Could anybody give me some suggestion
