Kottu Roti (Sri Lanka)
Serves 6-8
2 lbs curried, chicken, beef, mutton, pork or a combination of meats- cut into small cubes
12-15 large tortillas - cut into 1cm by 5cm strips
2-3 bulbs of garlic - finely chopped
1 cm by 1 cm piece of ginger, finely chopped
3 green chilies (Serrano peppers) - finely chopped
1 lb of leeks - chopped
1 lb of carrots - grated
2 medium onions - chopped
6 eggs - beaten
2stalks of curry leaves - leaves separated
1/2 tablespoon of salt
1/2 tablespoon of ground black pepper
1/4 cup of oil
Divide all ingredients separately into four portions. Heat ½ cup of oil in a large frying pan or wok. Add onions, garlic, ginger, curry leaves, and green chilies. When the onions are transparent add salt, black pepper, leeks and the carrots. When the vegetables are almost cooked, add the tortillas and the drained meat. Make sure to keep stirring the mixture to prevent it sticking together. Finally, add the eggs and fry until the eggs are cooked. Repeat the process three times (until all the ingredients are prepared). Serve hot with the leftover gravy from the meat curry and with Mendis ( 7 year old Coconut Arrack for best effect!
