Howsoever I try I donot get fatten round shape, it comes like Bonda. cCould you give me some tips to make a round shape Ulundu vadai.

Hi,
THe reason for your vadais to become like bonda may be because there it may be very watery.So Once you grind the urad daal mix ravai with that and let it absorb for 30mts - 1 hour.Then start frying you will get the best vadas.The proportion of urad daal and sooji must be
Urad daal = 1 cup
sooji = 1 cup

to prepare urad dhal vadai, first u have to soak urad dhal for 1/2 hr to 45 min. then grind soaked urad dhal,4-5 green chillies, salt to taste and add asafoetida a pinch and also add curry leaves. then make the batter into a disc shape and put a hole in the middle and deep fry it. now it is ready to eat.

Hi, For crispy round medhu vadas, soak urid dal in warm water for abt 45 minutes then grind it with green chillies, red chillies and salt and asafoetida adding very little water slowly from time to time till the batter is soft and comes like a ball. Then take a handfull of batter and put it on a wet plastic sheet. Note that you should never faltten the batter just put a hole in the centre with your index finger and put in the oil for frying, on a medium fire. If you flatten the batter the vadas get flat and lose crispiness. And after evry vada clear the plastic with water and dampen your hands before taking next batter for next vada!
