Need help about "RED CHILLIES"?

hi Friends ,
SOmetimes, i used to buy green chillies more than enough......i.e. i miss in calculation. So, some of them become red in color after some days. So, my question is , is there any use of this ripened green chillies.Coz , i have seen some of the north indians used to buy this red color chillies (this is not the dried chillies) ....

Just use them like any other chillie-they are red and a bit hotter, but that's the only difference! You could also dry them in the sun and store them with other dried red chillies. NO need to waste them.

Well, I too by mistakes buys green chillies more in qty. than I want.And not to spoil it after keeping for a long time.I make a paste with little Lemon juice & salt & store it in a refigerator for using it in daily curries.So, If u too like this.Can do this.It will be good & fresh.

You can freeze the green chillies without taking its head off. It last long and chop it when frozen to use. Works pretty well. In Canada, the real hot green chillies come once in a year and I buy it in bulk and freeze for year long, so it last till I get my new stock (yearly)

hmm...pretty interesting. Chilli management, I do in several different ways.
I found frozen green chillies in Indian stores, which helps me when I run out of chillies. At other times, if my chillies turn red..its my good luck...sambar and rasam would be extra color full and tasty. Well, its news to me that they would be extra hot when red. I thought they would be somewhat sweet when they ripen. I don't remember well, but back home, in Andhra, they make ripened redchilli pickle...which is hot...but very tasty too. I know they do not make with the variety that we are talking about.
About storing in the refrigerator, they stay well when you remove their stems and store them cleaned and dry them free of any wet in an airtight container.

Hey Gaya3,
This recipe i found in net,Try this...
Chillie fruit thokku
chillie fruit - red and fresh(not dry ones) - 1/4 kg, tamarind - lime sized, salt - 2 tsp, asafoetida - 1/2 tsp
Grind the above and refrigerate.
When required, heat 4 tsp of oil, add 1/4 tsp fenugreek powder and then add 1/2 cup of the ground paste. Fry well till it becomes a non sticky paste.

wat u can do with ur red chillis is:
take the stems off.
add two tsp oil in a kadai,add mustard,urad dal,channa dal(like how u wud for thalichu kotrathukku ie..thadka),add a coin size of ginger,curry leaves and hing.a pinch of tamarind,and the red chillis.
jus fry till the heat goesthru and then add salt and set aside to kool..make a paste out of it,adding drops of water..
this thokku will b grt with dosai,idli or with curd rice..i like it with dosai..
try it out..u can add a small bit of vellam(jaggery),if its too spicy for u.
