Go to Gobi (Gobichettipalayam). Get Manchurian .Put it in the hot sun for two days.
You will get Gobi Manchuriuan(dry) exactly. This you can do it in your home.

Take big florets of cauliflower and put it in hot water with little salt. let it stand for half an hour. Take 1 cup of plain flour, 1 cup of corn flour & half cup rice flour, add required salt, 1tsp sugar, 2tsp soya sauce, 1tsp tomato sauce and required quantity of water and make it a smooth batter (bajji consistency). Now take cauliflower florets and soak it in this batter & deep fry in oil. Gobi manchurian (dry) is ready.

Cut cauliflower into pieces and wash it in hot water.Make a batter of maida(1 cup),corn flour(1 1/2 tbsp),chilli powder(little),salt and water.Dip caulis in the batter and deep fry them.In a wok add oil,then onions(slit lengthwise),capsicum(if u prefer),soy sauce and tomato sauce and a bit os salt if req.Add the caulis to the sauce and toss well in high flame.Then add chopped spring onions.Thats gobhi manchurian.

The following is a recipe for dry gobi manchurian.
Ingredients: Cauliflower florets-200 gm, ajinomotto-1 pinch, Ginger Garlic paste-2 tsp,Soy Sauce-1½ tsp, Vinegar-1 tsp,White pepper powder-½ tsp,Red chilli powder-2 tsp,Egg (or corn flour paste)Corn flour-2 tsp,Chopped green chillies-2 tsp, Chopped garlic-2 tsp,Oil to fry, salt and spring onions one bunch.

Preparation Method is as follows:
1. Marinate gobi florets with soy sauce with salt, 1 tsp chilli powder, pepper powder, ajinomotto, vinegar and ginger garlic paste and keep aside for 3-4 hours.
2. Beat the egg, add the remaining chillipowder, salt, and corn flour (the mixture should not be too thick…so add flour carefully) and mix well.
3. Put the marinated gobi in the egg mixture and mix well until all the florets are well coated.
4. Heat the oil in a pan (high flame), and deep fry the florets. Fry them for one minute.
5. Heat a little oil, add the chopped green chillies and garlic for a minute and add the fried florets and fry for another minute.
6. Garnish with chopped green part of the spring onions. Goes well with fried rice or as a teatime snack.

To make the soupy manchurian gravy:
chop one onion into very small pieces, grind one big onion to paste and puree one big red tomato. heat oil in a pan, fry the onions till it becomes transparent, then add ginger garlic paste when done, add the onion paste and saute again.. when oil comes out, and cut chillies and tomato puree allow to boil for 2 minutes. then add two cups of water mixed with one teaspoon corn flour, salt and ajinomoto and stir well until u reach the consistency u want. then add few drops of soy sauce until the color of the gravy changes to brown..to this boiling soup, put the above fried gobi manchurian and boil for another minute in low flame. serve hot!

A tip to clean Cauliflower put the cut florets in a bowl of warm water with some salt..then rinse off in cold water..
