arisi murukku

how do you make arisi murukku? I like it spicy.

Soak a cup of raw-rice in water for sometime. Take out and dry on a spread cloth. Dry roast one cup of urad dhal (black gram - uzhundu paruppu), until you get a typical fragrance. Dry roast the rice also. Dry grind in a mixer-grinder both separately into powder and mix them together. Add three teaspoons of jeera (cumin seeds) and enough salt to taste. Add a teaspoon of asaefoetida (hing/perumkaayam) and if you need it spicy a litte bit of chilli powder. Add water to this powder-mixture slowly and knead with fingers to make a tight dough. Put the dough into a "Murukku achchu" (Sevai naazhi). Heat enough oil in a kadai (such that the murukku can be deep fried) and press the achchu so that the dough falls into the oil. Deep fry both sides. Older generations knew how to coil the murukku using the fingers and palm which was called "Kai Murukku". Nowadays everyone uses a kitchen-press with different shaped holes.

Sorry, I made one mistake in the measurement. The urad dhal should be one-fourth of rice. That is one cup of rice and quarter-cup of urad dhal! Hoe you have not made yet.

Soak 4 cups of parboiled rice in water for abt 8 hours. soak about 10 to 12 red chillies and a bit of hing for about 10 minutes. Wash the soaked rice and grind it along with chillies and hing in the grinder into a thick smooth paste. Powder roasted channa dal in the mixie and take 3 cups of the fine powder and add it to the ground batter. add required amount of salt and 50 gms of butter to the batter and mix thoroughly with your hand and see that there are no lumps. a little water can also be added if the dough is very hard. Now put the mavu in the achu and make murukkus. U get yummy spicy murukku. try it and let me know.
