hello friends,
can any one of you please tell me how to prepare garlic chutney(famous in tamil nadu)which we use with idli.

Peel garlic and grind it along with red chillies,salt,tamarind and few curry leaves.Heat oil,add mustard seeds.Then add ground chutney and fry well till the raw smell goes.

Hi,
Here is the recipe for Kara Chutney served with iddly in TN.
Tomato - 1
Red Chilly - 4-5
Tamrind - 1 small ping pong ball size
Garlic - 5-6 cloves
salt as per taste.
Oil - 1/4 cup
Heat oil is a pan. Add the tomato's and chilly and fry nicely. Once
the tomato is well cooked. remove and cool the mixture. Grind this
with the other ingredints to a smooth paste. Temper with mustard
seeds and karipatha. Serve. This is really hot chutney.

Garlic Chutney
10-15 garlic pods finely minced; 1 big Onion finely minced; 1/4 tspn each white pepper pwd/Ajinimota;1- 2tbspn Tomato Sauce/Ketchup;1/2 tsp Sugar; Oil 1 tspn;2-3 Kashmiri Red Dry Chillies - deseed & soak in warm water for 15 mins. Salt to taste; 1/4 cup water.
Put oil in a wok, add minced garlic & onions fry on low flame till golden brown - keep aside to cool down.
Grind to a fine paste the red chillies add ajinimoto, salt, sugar, pepper pwd, tomato sauce; & water- mix well, pour into a bowl add the fried onion & garlic pcs, mix well & serve.

I think you should skip ajinomoto.
It's not healthy!

Kerala garlic chutney,
Chop garlic into small pieces, fry on low heat with a little chilli powder and salt. When cool grind into a pulp. You can add more oil or salt when you have it with dosa or idli.
