Hi Joe G,
What do you mean by comfort food ? Do you call vegetarian food as comfort food ? Anyway, here is a recepie for making Dhal.
Easy Dhal
Ingredients
1. Tuar Dhal - 1 CUP (small)
2. Carrots - sliced 1/2 cup
3. Beans - sliced 1/2 cup
4. Cauliflower - 1/2 cup chopped
5. Tomato - 2 medium sized, chopped
6. Celantro (coriander leaves) - a small bunch chopped
7. Green Chilly - 1 chopped
8. Turmeric powder - a little - as required
9. Salt to taste
10. Ghee or Oil - 3 tbsp
11. Jeera (cumin seeds) - 2 spoons
12. Dhania powder (Coriander seeds powder) - 1& half spoon
13. Red Chilly powder - as required
14. Curry leaves - a small bunch ,chopped
15. Asafoetida powder - a little
Method:
1) Wash the dhal & the vegetables.
2) Add required amount of water and pressure cook all the ingredients from 1 to 9 & let it cool.
3) In a pan heat oil or ghee, add jeera and once its cooked add the asafoetida powder, dhania powder, red chilly powder and finally add the curry leaves.
4) Add the cooked dhal/veggies to this pan and cook it until you get a boil & remove from fire.
Garnish this with fresh celantro & curry leaves.
5)Serve hot with rice or roti & pickles.
