Hi,
Here is how I make red kidney beans (rajma).
I usually soak rajma overnight and then cook them in the pressure cooker the next day or sometime also use tins.
For around 500 gm cooked rajma:
1 big onion
4-5 strokes of garlic
small piece of ginger
2-3 dry red chillies
grind all together in mixer.
Put two table spoon of oil in the vessel and little ajwain and hing (I use this two to prevent gases as all beans produce lots of gases in the intenstines)and saute this mixture for one or two min. till the oil comes out.
Add coriander powder and little turmeric.
when again oil starts seperating from the mixture add chopped tomato (fresh is better but u can also use tin).
Let it mix well with the mixture then add chilli powder if u wish.
I usally also add some garam masala.
Then at last add rajma beans and little water. I usually use the water into which the rajma was cooked but if U use tinned rajma then wash them twice or thrice and use regular water.
Let it boil on slow fire till it becomes thick.
U can put fresh coriander leaves at the end.
I usally prepare chana daal also the same way but for that I don't grind the mixture but cut onion and garlic and ginger into fine peices.
Try and let me know how it was.
