riya, this is a site where people exchange recipes. unless people ask, where is the chance to post? look in different threads (eg: hemant's cookery corner, Ramkis' non-veg thread, chitra's kerala recipes etc) and you will find valueable info for cooking..

I have seen a lot of chettinad recipes on magazines and on the web. I have tried one chettinad recipe from Hemntji's website and another one from another source. They tasted good. I wonder if anybody could tell what is the history behind chettinad recipes? Chettinad seems to be the name of a place, isn't it?

Hi Mini, Chettinad is ofcourse a village. There r similar villages in the Sivagangai dist of Tamil Nadu, where the majority of people are Chettiars(a caste). The speciality of Chettiars are : (i) the house they live in (Tall big bungalows which are decades old)
(ii) Their food & cooking
their way of cooking has now spread very far & people have catogarised it as "Chettinad recipes".
You may ask, when there r so many villages for chettiars why is that it's called as "chettinad recipes" alone named after a single village.......Chettinad is like a headquarter to all these villages.....it was the village where Raja sir Muttaiah chettiar was born....since it's Raja's place it became so very famous......Actually the other name for Chettinad is Nattarasan Kottai.For the better understanding of people it's called as chettinad

This is a response towoards seetha,s writings about chettinad. Sir Raja Muthiah chettiars native place is called kanadu kathan Or kanthampatti and not Naatarasan Kottai.

In response to Seetha & Suresh, you are right Sir Muthiah Chettiars native place is Kanadu Kaathan or Kanthampatti. Naatarasan Kottai is another village in chettinad. Chettinad itself is not a single village but name for a group of (originally 96) villages were the chettiars live/used to live. The reason Seetha thinks that Kaanadu Kaathan is Chettinad might be due to the fact that the railway station near Sir Muthiah Chettiar's bungalow is named Chettinad.

Recipe for Chicken Chettinad:
1. Whole chicken 1 kg 2. Cooking oil 5 Tbsp
3. Chopped onion 2 large 4. Ginger garlic paste 1 ˝ tsp
5. Tamarind marble size ball, no seed&string 6. salt just enough
soaked & ground to paste
for Masala:
7. Oil 1 Tbsp 8. Garam masala powder 2 Tsp
9. Dried red chilli 15 pc 10. Coriander seed 1 ˝ tsp
11. Black pepper corn 2 Tsp 12. Cumin seeds 1 Tsp
13. Saunf 1 Tsp 14. Coconut, grated 1 pc
15. Turmeric powder ˝ Tsp 16. Khus khus 2 Tsp
Method
Wash chicken and pat dry. Cut into serving portions with bone. Heat 1 tsp oil for masala and roast all ingradients individually. Grind all of them to a fine paste and set aside.
Heat 5 Tbsp oil and fry onion till it turns light brown. Add ginger garlic paste and continue to fry. Add ground masala paste and sauté for a few minutes. Add chicken and cook, stirring constantly, till browned and three-quarters cooked. Add a little water if needed, add tamarind paste and salt and cook at a low simmer till chicken is tender.

this with ref. to observation on chettiars.
they were the trading community of the state. gave meaning to the tamil saying "thiraikadal odi thiraviam thedu"- meaning something like- go across and earn/learn.they introduced the banking system in the state- because naturally- they were flushed with funds and also had the business acumen.
