This is how I make Palappam.
2 cups raw rice
1/2 cup cooked rice
5 tsp sugar
1/4 tsp yeast
1/2 cup coconut milk or 3tsp coconut milk powder
salt to taste
Soak the raw rice for 4-5 hrs.Take 4tsp warm water in a vessel, dissolve 2 tsp sugar and add yeast, keep it for 10-15 min for the yeast to ferment.Grind the rice into a smooth paste adding just the required amount of water.Then grind the cooked rice also and add to the above mixture.Then add the fermented yeast.Keep it overnight.The next day morning add 3tsp sugar, 1/2 cup coconut milk or 3 tsp coconut milk powder and salt to taste.Being in US, I usually use coconut milk powder.Add enough water to make to 'dosa mavu' consistency.Keep it for 1hr for the ' mavu' to ferment.You need the 'appachatty' to make the appam.It is better to use nonstick appachatty.When you make the appam , the middle portion should be bulging with frills towards the edges.middle portion should be white with frills in light brown colour.You can eat appam with chicken curry or wih sweetened coconut milk.

you can get the non.stick appachatty in any of the south indian stores.

I did not see any in Arlington, Irving or Richardson, Texas.
Do you know of any particular store in these areas or even in Cincinnati, Ohio?

It is better to use a good quality cast iron appachatty. It will make good palappam with nice lacelike sides than the nonstick veriety.
