Sweet Potato, anyone?

Dear All,
Im new to this forum. Ive been a silent observer for a while now and have found your treasure trove of recipes and tips to be highly useful. Now to my query...
Can anyone suggest any culinary delights from sweet potatoes? either subjis or sweet dishes? i seem to have a whole load of them...so please help!

Sweet Potato Fry
3 medium sweet potato
1/2 cup all-purpose flour
sugar to taste
pinch of salt
oil for frying
First wash cut the sweet potato in 1/2 inch thick(don't have peel the skin). Set aside.
In the medium bowl mix flour, salt and sugar. Then add enough water make a batter. The batter have to be slightly thick.
Heat the oil in the frying pan. Once the oil heat, dip the sweet potato in the batter and carefully put in the hot oil. Fry until it turns until golden brown.
It is very good with tea. Very popular snack in Malaysia

You can make sweet potato dosa.
Soak 1 cup of raw rice for 3-4 hours.
Grind sweet potato (2 medium sized), 5 pieces of coconut, red chillies, hing, curry leaves into a paste. Add the soaked rice and grind into a smooth paste. Add salt to the dough.
If you like to season it, heat a teaspoon of oil and crack the mustard seeds, add the urad dhal, hing and curry leaves and add it to the dough.
You can make dosa immediately.
