Does any one know how to make Plantain chips (Kaya varuthathu)crispy? Thanks in advance!

I am pasting below, fellow hubber's(Chitra & Suemani) recipes for you.Enjoy!
Banana chips: By chitra
Ingredients:
Unripe bananas 4
Peanut oil 4 cups
Turmeric powder 1/4 teaspoon
Salt 1 teaspoon
Peel the bananas and wash them in water to which a pinch of Turmeric is added. Take the bananas from the Turmeric water and dry them with a paper towel and keep them aside. To cut the bananas into thin slices you need a slicer. The one I use for this is called Mandolin Kitchen Slicer. It has three interchangeable stainless steel blades. Each blades will have one, two or three straight lines on it. The blade I use to make thin chips is the blade with two lines on it. Use the other ones to make thinner or thicker chips. Fix the blade on the slicer in such a way that the 2 lines are on top.
Take a small bowl and pour a half a cup of water in it. To this add a little less than ¼ teaspoon of Turmeric and ½ teaspoon of salt. Mix this well and keep aside.
Now heat up a thick bottomed sauce pan and pour the Peanut oil in it. To test whether the oil has reached the correct temperature, dip a wooden chop stick in the oil and see whether the oil bubbles around it. If so the oil is ready to receive the banana chips.
Take the dry banana and using the slicer, slice them right into the hot oil. Depending on the size of the saucepan you can slice half of a banana or a whole one into the oil. Now use a sieved stainless steel spoon and stir carefully the chips inside the oil. When the chips get fried they will make a peculiar sound like the sound produced by glass bangles hitting against each other. Now with your hand scoop some Turmeric and salt water and sprinkle it onto the chips inside the oil. This makes a noisy bubbly sound. If you want you can cover the pan with a lid for awhile till the bubbling sound settles down. Keep stirring the contents inside the hot oil until the bubbles subside almost completely. Now the chips are fried and you can scoop them out of the oil and place them on paper towel to drain the oil from it. Taste and see if it has enough salt and if you want more salty add a little bit more salt to the Turmeric water. You can also adjust the color now by adding more Turmeric or reducing the color by adding more water to the Turmeric-salt water.
Repeat the whole process till all the bananas are fried.
Spread the fried chips in a thin layer on a sheet of brown paper or paper towel till they are cold. Now you can store them in a dry glass bottle and close the lid only when they are completely cold. If you put warm chips in a bottle they become soggy.
Banana chips: By Suemani
first you peel the kerala plaintains and put them into the turmeric water. then take themout one by one and cut them round slices .
then as you cut them put them on dry towel or paper so yu will not have too much water.
before doing this boil water and add salt lots of them . this you will perfect as you make the chips with experience.
the salt will be completeely disolved . and cooled,
then go thro the process of cutting the chips by then it would have absorbed the trumeric to give the yeellow color.
now heatr the oil and PLEASE MAKE SURE THAT THE OIL POT IS DEEP AND THE OIL IS NOT BRIMMING FULL.
THEN TOSS THE CHIPS INTO THE HOT OIL AND STIR FOR AWHILE WHEN YOU HEAER A CLICK CLIK SOUND OF THE CHIPS MOVING AROUND THEN ADD ONE OR TWO TABLESPOON OF SALT WATER INTO THE CHIPS , THE WHOLE THING WILL BE SUDSY AND THE OIL WILL TEND TO COME UP . THAT IS WHY YOU SHOULD NOT HAVE THE POT FILLED WITH OIL . IT HSOULD BE ONLY HALF FULL. THIS TAKES TIME AND AFTER THE FIRST ROUND YU WILL KNOWTO ADD MORE OR LESS SALT.
HOPE UI HAVE HELPED YOU. BE CAREFUL WHEN YOU DO THIS . BECAUSE THE FIRST TIME I DID THIS I HAVE AN ELECTRIC STOVE THE OIL CAME UP AND ALL FELL INTO THE COIL AND INSIDE IT WAS A BIG BIG HUGE MESS.
