Paneer

Just wanted to know the right way to mke paneer as the one I make always crumbles and gets all mussy What am I doing wrong?

i got this method from hemantji's site..try this method of making paneer..
Ingredients Milk - 1 litre Citric Acid or Lemon (juice) - 1/2 tsp Water - 2 tbsp Method Dissolve the citric acid in water. Bring milk to boil, stirring continuously. Add the acid solution gradually, while stirring. When the milk curdles fully, switch off the gas. Cover for 3-4 minutes. Drain into a muslin cloth. Hold pouch under running water. Press out excess water. Shape and place cloth under heavy weight required (stone slab) for 2-3 hours before using as required

This is what I do - quite a bit as Gayatri Subrmanian wrote:
I use whole milk or 2% if later I will fry paneer. Boil the milk, and instead of Lemon juice or Citric Acid (which really is same chemical as in Lemon juice but is synthetic), I use store brand white vinegar. I buy the large bottle - very cheap they are - $1.25 or so and last quite a bit.
I pour it in milk as described by Gayatri Subramanian. After pouring in Muslin cloth, I pour cold water on it so that vinegar smell is washed off, as well as the process of formation of Paneer stops because material becomes colder. I feel the Paneer turns out softer this way. now you can easily sqeeze water out because Paneer is no more boiling hot.
The more you sqeeze water out of paneer, firmer it will become, so you can determine your own timings. Then I cut the thick slab in pieces of my choice.
