Bitter gourd ( Pavakka)

I got lots of bitter gourd from a friend. Any idea how to preserve them for future use?

pavvakkai can be cut into small round pieces and soaked in curd mixed with salt and little [chilli optional] keep it overnight then take a clean cotton cloth go to terrace if you have spread the cloth spread the curd pavvakkai pieces in sun till it is dried off, it may take 1 to 2 days deepening on sunshine in your city atter that take the dried pavvakai put it in clean bottle and fry it like more molakku try

Cut them into small long pieces, deep fry them, and keep aside...grind fried fenugreek seeds (half teaspoon), split dal (kadalaiparuppu - 2 teaspoon), asafoetida, and salt into coarse powder. cook them all together until the mixture is thick. add a teaspoon of jaggery and season with mustard, and curry leaves...store in an airtight bottle after bringing it to the room temperature.

EASIET WAY TO MAKE PAVAKIA
2/3 PCS -CUT PAVAKIA INTO SMALL PIECES
TAKE 3/4 ONIONS(CUT LONG SLICE)
ONE GREEN CHILLY
1 TSP TURMERIC POWDER
A PINCH SUGAR
SALT AS PER YOUR TASTE
2/3 TSP OIL
COCONUT.
TAKE A VESSEL PUT LITTLE OIL , PUT ONION AND CHILLY , MAKE IT LITTLE PINK IN COLOUR AND PUT TURMERIC POWDER AND SALT AND PUT THE PAVAKIA AND SAUTE IT NICELY. KEEP IT CLOSED IN A VERY SLOW FIRE TO COOK DO NOT PUT WATER. ONCE ITS COOKED SPRINKLE SOME COCONUT AND A PINCH OF SUGAR IT TASTE VERY NICE.

If you take pavakka juice in the morning, it is supposed to bring the sugar level down for the diabetes patients.

No deep frying?..fine..
cut pavakka into small pieces and wash with the rice soup (kanji) for those do not like the bitterness in it..but remember it is better if u dont wash any vegetable after cutting them..
put these pieces, small cut tomatoes and an onion, turmeric powder, chilly powder, and salt in a pan, cover it and cook in a low flame...if u wish u can season it or just decorate with curry leaves..
