Hi,
I am working in US. I need some suggestions for bringing snack (something spicy traditional Indian vegetarian snack) to a group of about 40 people. This is on the eve of Thanksgiving in US. Will be thankful if you can reply ASAP.
THanks,
Usha

Hi Usha,
There are many snacks (veggies) that you could make. Examples are:
Pakodas, Batata wada or Aloo bonda, bhajis, dal wadas etc.
If you want a heavier snack, you could go for veg.puffs, samosas, etc.
IF you decide on what you want to prepare, someone could help you in a better way.
Bye,
CI

Hi ladies,
Here is the recipe for vegetable puffs:
Ingredients: Makes 12 puffs
1 package puff pastry sheets (Pepperidge Farms)
For the filling:
Onion - 1 big
Potatoes - 2 big
Carrots - 2 medium
Beans - 1 cup diced
Peas - 1/4 cup
Tomato - 1 big
Green chillies - 8 (can vary depending on how hot u want)
Turmeric - 1/2 tsp
Mustard - 1/4 tsp
Coriander leaves - 1/4 cup chopped
Salt - to taste
Amchoor powder - 1 tsp
Garam Masala - 1/2 tsp
Oil - 3 Tbsp for stuffing 2 Tbsp for baking
Method:
Preparing the stuffing:
1. Cut finely all the vegetables except potatoes.
2. Cook the potatoes and mash them coarsely.
3. Heat oil in a kadai, put mustard seeds, chopped green chillies, turmeric and fry onions till they are done. Add all the rest of the vegetables and keep stirring until they are done.
4. Add salt, garam masala, amchoor powder.
5. Finally add mashed potatoes and mix them. Keep on low flame for 3 minutes.
6. Add coriander leaves and mix well. Your stuffing is done.
Preparing the puffs:
1. Preheat the oven to 350 F.
2. Grease a baking sheet (cookie sheet is best).
3. Thaw the puff pastry sheets according to the package instructions.
4. In one packet, there will be two sheets which are folded. Each sheet has three strips. Each strip can make two puffs. So, Cut the sheets into three lengthwise (already folded) strips and each strip into two horizontal strips. So, you've totally 12 pieces from an entire packet.
5. Wet your fingers and make a small rectangular patti from the stuffing. Keep aside.
6. Wet your fingers and touch the edges of the pastry sheet (that u have cut). Keep a patti on one side and fold them to cover. Seal the edges by pressing.
7. Repeat this procedure for all of them.
8. Keep on the baking sheet and brush the top with some oil (USe pastry brush to avoid excess oil).
9. Bake in the over for 18-20 minutes.
10. Keep turning the sides once in 5 minutes.
11. You may have to decrease or increase the time depending on how good your oven is. Make sure that the sides are golden brown.
12. Caution: Do not keep the baking sheet on the lowest rack. It'll burn your puffs.
13. Let it cool a little bit before serving. (maybe 15 minutes) You can serve it with ketchup or mint chutney or eaten as it is.
I usually make it for parties as appetizers. Easy to make. You can make the stuffing before and bake just before your guests come.
Let me know how it turned out. Also, let me know if I've missed anything in it.
Bye,
CI

You can get puff pastry sheets in any American grocery stores in freezer section. Look for pepperridge farm brand.

People mostly make desserts from this puff pastry. Look in the dessert-cooking section with the coolwhip and frozen fruits.
Also just ask a store clerk. It is around $3 a pkt.

Well, in my opinion anything that needs manual labor for individual pieces is not a good snack for a larger group of people. You can make Japanese sushi and cut it, gujarathi Dhokla, Handwa & Khandvi. Not much effort for individual pieces.

A friend of mine gave this idea that handwa can be made in small muffin baking pans and served with toothpicks as finger food - a very decorative way to serve it.

You can make onion pakodas. It is easy to make and everybody will enjoy it. Mix Chana flour and rice flour in the ratio of 4:1. Cut onions and add it to the flour mixture. add salt, red pepper powder, cashew pieces and 1/2 cup of hot oil. Add a tbsp of melted butter. mix them all together. When you are ready to fry them, add water to a smaller portion (you have to add water when you are just ready to fry. so you have to add water in several different batches). Make sure that the mixture is just wet (not watery). Pick it up in your hand and just crumple into the hot oil in big pieces. Be careful to avoid the oil from splashing at you. Once the pakoda turns brownish, take it out drain it and serve it. If you add too much water, the pakodas will not crisp.
