hi,
could anybody plz post the recipe for peanut chikki (available in India)-usually it will be brown in color?

It's very easy, just take sugar and heat it in a thick bottom pan. When it melts and turns brown( not dark) add the peanuts and stir for a little while on low heat. Then turn out onto a smooth surface and score it into squares before it cools completely.

Its been a while since I made peanut chikkis and I am not sure abt the measure... so I am giving u approximate measures here... sorry abt that...
I am giving the recipe for a small quantity. Try it and if u like it.. u can just double or triple the quantity and make it again...
Roast abt a cup of peanuts and de skin them after they are cooled completely
take abt a cup of jaggery or more if u like it sweeter and add abt a less than a quarter of a cup of water in a heavy bottom vessel or I usually use non stick vessel for this and put it on a low flame and stirr till the jaggery dissolves... u can strain it at this point with a metal sieve to remove stones if there are any. put it back on the flame and keep stirring till the jaggery starts to boil... keep stirring and once it starts to leave the sides of the vessel... add abt a spoon or 2 of ghee and stir it for another 10 seconds... now add the peanuts and stir it..for maybe abt 40 seconds

remove from fire and pour into a greased baking sheet and after it cools down you can break it into pieces...
another variation to this is add whole cashewnuts instead of the peanuts or u can use both you dont have to roast the cashewnuts...
u can also add some dry coconut to it... if like
and when I make it with just cashewnuts I usually make small balls out of it ( cashew laddoos if u can call them that )
for this just take a spoon and measure out desired quantity into a tray and then dip your hands in cold water( not too much water though) and shape them... my husband loves these...
But make sure you dont eat too much of these as cashewnuts causes Pitham in lot of people when consumed in large quantities. It also seems to increase your cholestrol...
