Aviyal
I am from Ernakulam living in Dubai, a pure Malayali Bhramin. I think nobody can beat our prepartion of 'AVIYAL'.
You can use the following vegetables:
Drumstick (Muringakai)
Chenai (Yam)
Kai (Green Plantain / Raw Plantain)
Carrot
Beans
Achingapayar
Kovakai
Mango (if not using Yogurt)
Vellarikai
Kumbalangai
Kathirikkai / Brinjal
2 - 3 green chilles slit
Cut all the above vegetables into a medium thin strip (similar to our small finger - hope that's more easy way to explain).
Add 1 tspoon of chille powder, 1 tspoon of turmeric powder, salt to taste and boil till the vegetable are done in very
small quantity of water (as most of the vegetables we are using have water in them it is more than enough if we add less
water).
Grind together desired quantity of fresh scrapped coconut (to get the real taste) along with 2 - 4 red chilles and a tspoon
full of cumin seed (no need to grind with water and make a smooth paste).
Now add 2 - 3 spoons of curd or yogurt to the boiled vegetables if not using mango or tamarind, lower the heat let it mix
with the vegetables, then add the ground coconut, mix well, let the vegetables coat nicely with ground coconut, off the
stove / gas, decorate it finally with curry leaves and 1 - 2 spoons of coconut oil.
This is a traditional 'AVIYAL' receipe, hope all will enjoy making and having it. It is also a nutritious and good health
food as it contains almost all vegetables.

dear idiappam,
a 'good man', i am assuming he whose activities in the mode of goodness should sincerely try to find out the existance of god. this human life is so valuable and should be utilised to acquire knowledge of god. you must read the bhagavad gita.there are many bhagavad gitas but i really recommend Bhagavad gita as it is by A C Bhaktivedanta Swami Prabhupada.
Vaishnava cooking is pure vegetarian. it does not include even onion,garlic, and others like gelatin, rennet, lecithin, etc
vedic culture is explained and understood by reading the Bhagavad gita.

Searching for god if one forgets to help the sufferings of his fellow men, then the "good man" has failed miserably. If he was searching for god in the middle of a forest and did not see the suffering, then it is a different thing.
Anyhow, let's prepare the aviyal and eat it :)

I can understand not using gelatin, etc., but why not onion and garlic. They are without a doubt plant food. Is it written somewhere that vaishnavas should not eat garlic/onion or is this just a habit?

Leave god aside and just be a humble servant to all beings - that is Saiva Siddhantam . Love -the way to him!
Know God,the lives on earth are secondary - that is Vedantam that the Vaishnavites and Bhagavad Gita promotes. Knowlege the way to him.
I reject vedantam, and Vadakalai vaishnavam that is based on Sanskritic Mythology and Puranas!
Be a humble servant - not just by name.

Why this useless discussion in the Avial thread?. Apparently someone thought that the thread itself can be made into an Avial (a word in Tamil which also means mixture). Avial has nothing to do with Vaishnavam. As Vishnu means "All pervading" She (purposefully I am not using the masculine gender here) is also in Avial.
