Hi,
soak
11/2 tbs coriander seed
3/4 tsp cumin seed
3/4 tsp toor dhal or channa dhal
4 to 5 green chillis (small)
50gms of fresh coconut
ginger 1/2 inch (optional)
300 ml thick buttermilk or cultured milk
salt
musturd seed fenugreek dry chilli for seasoning
ash gourd, choe chow, drumstick,bendi can be used as vegeis
in a dish pour little oil and heat when it is ready add in fenugreek, musterd dry chilliand let musterd crack.add little water and salt. let it boil. add vegeis. meanwhile grind the soaked ingredients with coconut and green chillis do not add water.use butter milk.add the masala with the rest of the b.milk. when the vegeis are cooked add in the buttermilk mixture. simmer the whole kozhambu for 4 to 5 min. do not boil it. ENJOY

If you do not want to use Coconut, u can substitute soft Tofu without compromising taste
