Hello Archana,
Use butter milk for soaking . Keep it at room temperature overnight. Next day morning, add salt, Ginger, green chillies, Asfoetida, little sugar and a little turmeric powder. Some people add a little fenugreek in soaking.
First mix these ingredients. Then mix oil and a little cooking soda in a cup and make milky liquid by mixing vigourously. Add this soda /oil mix to Dhokla dough and mix fast. Pour the dough in a plate and steam cook. You may sprinkle red chilli powder on top of the dough surface in the plate before you steam it.
Once cooked, cut in squares. You may garnish with cilantro/Kothumalli.
