I used to eat at an Indian restaurant called "Taj Mahal" in Yokohama, Japan. There was a thick, brown, chicken curry which had chunks of capsicum and onion in it. I asked the chef once what it was called, and he said "Chicken Buhna." Can anyone tell me how to make a curry which sounds similar to this?
Thanks.

Hello Aaron!
"Bhuna" is a term used to define a cooking process/method. It could be a part of the process or be the entire process itself.
It basically involves, cooking food in oil with spices, in a mix of browned onions and tomatoes, without adding any water.
Saute some chopped onions in oil in an open pan, till brown. Add ginger/garlic chopped. Add chopped tomatoes and the powdered spices. Stir and cook till tomatoes are well blended. Add the chicken and cook on fairly high heat, stirring constantly.
And yes you may add diced green pepper/capsicum, tomatoes and or onions towards the end.
