Eggless Buttermilk Coffee Cake
This is a dandy and you can make it as quick as a flash.
2 cups brown sugar
2 cups flour
1/2 cup butter or regular margarine
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk or sour milk
1/2 cup nuts (optional - but nice
Mix the sugar, flour, and butter until it has the consistency of fine crumbs. Remove and reserve 1/2 cup of the mixture for topping. To the remaining flour mixture, add baking soda, salt, and buttermilk; blend well. Spread in a 9 inch x 9 inch greased pan. Sprinkle the reserved crumbs over top (with nuts). Bake at 375 for 30 minutes, or until a toothpick inserted in the centre comes out clean. (Chopped nuts may be added to the batter as well, if you like.) This freezes well and may be rejuvenated by reheating. To make sour milk add 1 tbs. of white vinegar or lemon juice to 1 cup milk.

Eggless Banana cake
Maida--1 cup
baking powder--2 tsp
baking soda--1 tsp
ripe banana-2
vanilla essence--1 tsp
butter--1/2 stick
brown sugar/white sugar--1/2 cup
milk--6tbsp
method
sift flour,baking powder and baking soda together.
Smash bananas,add vanilla essence,sugar,butter and whip thoroughly adding milk slowly till mixture is frothy.
mix this with flour.add more milk to loosen or more flour to tighten.should be dripping consistency.
grease baking pan.pour the mixture till half of pan and bake in a preheated oven at 350F for 30-40 min.s or the fork pricked comes out clean.
Leftover bananas can be used this way without throwing them.
