Hi Leena
dosai kal is the tava(iron plate) on which we pour Dosa after the batter is ready. It is available in as a Non-stick Dosa pan in many stores.Depends on where you reside.

Leena,
Nirlep brand is good. Only make sure the base is thick. If the base is thin, on hot plates the dosai kall gets spoiled fast.
even Prestige is a good brand.

Hello Libby,
What you say is partly true.Kal means stone. In olden days, Dosai was stidified (suttified), if I can use that expression, on black stones. These were black granites. These stones were known as Dosai kals. Incidently there were Adaikals also.Adais were made on stones too.!!
This reminds me of a very good human being that I have come to know.
Mr Adaikal Raj, (Ex.Congress MP. from Trichy. When I asked one of his relatives and assistants, he had given me the above explanation.

No, no, no......
Adaikal (Raj) comes from the word adaikkalam - which means refuge!

Hello Leena,
Any iron plate or non stick plate (tawa) which is used for making dosai or any tawa item is known as Dosai Kal.

Hi Hemant
Thanks for your quick reply. I am just curious, may I ask you what kind of tawa do you use in your kitchen for making dosas ? Non stick such as nirlep etc. or Iron tawa ? which one do you prefer ?

Hello Leena,
I use thick dosai tawa made of iron plate.(weight 2.5 kgs(dosaikal) for making dosais and Bhakharis.
We do not like to use non stick for some reason.
We use non stick pan for stuffed curries.

HI Hemant,
Even I have a thick Iron tawa which I bought in Bombay where it is known as Puranpoli tawa and not Dosaikal but it does not have a handle. Therefore when I make dosa on it and when I try to roll the dosa with a spatula on the tawa the tawa keeps on moving away from the gas flame. Is this kind of tawa is available with handle ? By the way when I was at your website I was very happy to see your photograph and read about you.I always wanted to see you know more about you, whom I adore and respect so much.

Hello Leena,
I understand your proble about tawa.It is evident that the tawa you are using is light in weight. You need a very heavy one as I use.Heavy dosaikal gives a very fine quality of dosais.
Such dosaikals are generally without handle.I don't know where you live now, but if you try and search near your place, it is likely that you will get it.
Thanks for the good words you mentioned about me.
I am a person who is striving to be good. That's all.

Hi Hemant,
I live in Tel-Aviv, Israel, 15 years ago I migrated to Israel with my husband and daughter and I am originally from Bombay. Next year I am planning to visit Bombay for visiting family and friends and also planning to buy the heaviest dosaikal available on the market then. Hemant, you need not strive to be good anymore as I think you have alreay reached very well beyond your goal. Because when a person starts giving his knowledge without expecting anything in return, he is not just good but much much more than that and you have started doing this long time back.
