Tofu masal
A simple dish.
cut the TOFU into 1cm cubics and put it on a kitchen towel to remove the water, deep fry then.
In a frying pan, heat some oil and add mustard, cumin, kariveppilai, cinnamon and finely chopped ginger and onions, add some chopped green chillie. Into this add chopped fresh tomato or the canned one. Add salt for taste and some MASALA podi or whatever the curry powder you got. cook for a while and then add the fried tofu pieces and cook further until the tofu is soaked properly. You can have this with Chapathi, rotti or rice.

Thai Eggplant Tofu(Vegetarian version)
Eggplant - long Japanese variety (1 lb)
Tofu - extra firm (1/2 lb)
Basil (sweet basil or Thai basil) - one bunch.
Garlic - 5 - 6 cloves
Soysauce 1-2 tablespoons depending on taste
Sugar - one teaspoon
Thai Green chillies - 4-5 depending on taste (or any other kind of chillies)
Put a heavy object on top of the tofu to drain it of liquid for 30 minutes (a cast iron skillet will do the job). Cut it into pieces. Deep fry. If you don't like to deep fry, marinate in soysauce and bake for 40 minutes in a 325 deg oven.
Cut Eggplant into inch long, wide pieces. Finely slice the garlic and green chillies.
Heat a table spoon of vegetable oil in a pan and saute the garlic and chillies for 2 minutes. Add the eggplant pieces, stir them for 3 minutes. Add salt. Add 1/2 a cup of water. With the pan on medium heat, cover the pan and let it cook for 4 minutes. open the lid and cook until all the water is gone. Add the tofu and stir until heated through. Then add sugar and soy sauce. Stir well. Add the full Basil leaves, and any flowers, no need to chop them, stir until well mixed and make sure that the leaves do not lose their color. That's it. Enjoy with plain rice or fried rice.
For the non-veg version, substitute Soy sauce for fish sauce - though i never tried it myself.
