Recipe for Roti Chanai

Here is a recipe I gave a few months ago.....
Roti Chanai is a Malaysian delicacy derived from Paratta of India. In Singapore it is refered to as Roti Paratta. Many people think that Chanai is a corrupted word of Chennai, whilst others say that Chanai is a Malay word meaning "to spread out."
Roti chanai is made from normal wheat flour and made into a dough by adding margarine/butter, egg, condensed milk and salt. This dough is then coated heavily with oil or margarine and left to season.
Small ba-lls are made from this dough and then spread out on a greasy table-top. This is then flung until a tissue thin stage. It is sprinkled with oil and then twisted and rolled into another layered ba-ll. After a short while, this is flattened and cooked in a greased pan.
After cooking, the roti is crushed with bare hands to make it super soft. :)

Canai is indeed a malay word, which means to flatten (eg batu canai = flatterning stone), but as I was educated non other than Dr. JB, he indicated that canai is a tamil. ;-)
The word ‘canai’ originated from ‘canai piditthali’ “'º¡¨½ À¢Ệ¾Ä¢”
Purota roti has been commercialized in Malaysia, thus we see alot of variation,
such as stuffed with egg, meat, sardine, vege, ice-cream, pineapple, etc.

Not strawberries, but strawberries with sugar - and youcan only getthese in the haven of strawberries, Cameron Highlands. mmmmmmm loveley stuff. :)

take some plain white flour. add salt,sugar;milk,sour--to taste--water--important do not add any oil--make into soft dough--important keep dough at room temparature for 3 hours-make dough into small ball--flatten the ball by hand--make it as flat as possible--have pleanty of oil in your hands--do not be stingy with oil--to futher flatten dough--take the cover of any metal port-size 4 times of a plate--apply pleanty of oil on plate or cover--do not be stingy of oil--keep flateening dough by putting it on oily plate--pressing dough outwards by both hands-you can even streatch outer edges of dough with yor hands-keep on streatching dough untill it is a thin layer--then fold it up-- can be round,oblong ;sqare, rectangle or any shape---need not be an expert-that is know how to throw the dough around---important--do not add any oil while making the dough--keep dough for at least 3hours-so that dough wii become easily streatchable--use plain white flour-other flours may not have streachable ability or quality---initially use pleanty of oil when flattening ball of dough---when you become expert --you reduce oil--when streatching dough ---intially will have holes--like torn singlet --it does not matter--as long as dough becomes a thin layer .

Can anybody tell me how to make the dipping sauce (i.e., "curry") for the roti chanai? I lived in Malaysia in the 70's and had roti chanai routinely for breakfast. I miss it so. And the bread was good yes; but that spicey green sauce that was served with it was oh so wonderful.

We have yet to taste a roti like that, which melts in your mouth. We had it in South Africa - Cape Town. Can any one help? please???

Hi Daphne
I am from Cape Town and also searching for a Cape Malay "roti" recipe. Have you had any luck? I will ask my Mom, sister as well. They are still in the Cape. I am in Charleston SC USA
I make my own chutney etc.

I was so fascinated with roti when my uncle served it for breakfast while I was vacationing in malaysia and we dipped it in this savoury curry sauce.From then on I got crazy and wondered how roti is made. The closest I got to was buy frozen roti from the grocery.(,")
