ada dosai

Anyone knows how to make ada dosai using chana dal , toor dal, moong dal , rice, and urad dal
I dont know if anything else other than the above ingredients and the measurments too.

The ingredients r right. For 1 cup raw rice use qtr. cup each of toor dal, channa dal, urad dal, brownish white chick peas, raw groundnuts can also b used. Soakeverything for 6 hrs.
Grind the above like ada batter not so thin like the dosa batter with curry leaves, asafoetida, red chillies and salt.
Your Ada batter is ready. This type is called paruppu ada (Dal Ada)

For Raw rice ada(Verum arisi adai) u soak 1 cup of raw rice
and grind them with cumin seeds, asafoedita, salt and coconut. The batter wud b thin. You cannot spread the batter on the tawa, u need to pour them on the tawa instead.

For 1 cup of raw rice, add a palm full of toor dal, and grind coarse like Rava with lot of pepper seeds, red chillies, and cumin seeds.
In a pan add 4 to 5 spoons of oil and season with mustard, channa dal, urad dal, red chillies (optional) and pour water 1:2.5 ratio and add salt and then the ground coarse mix to it and make it soggy.
Once t is warm, take a ball of the mix and using water and oil spread using your palms on the back side of a plate in a ada form and place them carefully in a preheated tawa and apply oil and turn sides until crispy brown and serve.

The Thavalai Adai if not made sogy and made little dry can be consumed as Rice Upma by adding little coconut while cooking. Toor dal can also be avoided.
The same mix if made into a oval shape can be consumed as Kozhakattai instead. But add a little coconut oil to the mix for kozhakattai.

Here's how i prepare adai,
Soak 1 cup of raw rice or boiled rice with 1/2 cup(heaped) toor dal, 1/2 cup channa dal and 3 tbsp of urad dal for 2- 3 hours. Grind them coarsely with 3 red chillies(or to your taste). Add enough salt and allow it to ferment for 5 - 6 hours and then prepare ada dosai. You can add finely chopped small onions, chopped curry leaves, coconut bits and then make thick adais.
Note: If u use boiled rice, the adais will come soft, so it is better to use raw rice for crisp adais.
