BREAD LOAF -- By Tarla Dalal
Ingredients:
(Makes 2 loaves of bread)
500 grams plain flour
30 grams fresh yeast (or) 15 grams dry yeast
2 tsp. sugar
1 Tbsp. butter
1 level tsp. salt
Method:
Sieve the flour. Mix the sugar & fresh yeast in 1 cup of warm water & keep aside for 2 mins.{See note at end of recipe on how to use dry yeast}. Dissolve the salt in 1/2 cup of warm water. Add both the liquids to the flour & make a soft dough, adding a little more warm water if required. Knead the dough for at least 6 mins. Add the butter, mix well & keep covered with a wet cloth for 25 mins. or until dough doubles in size. Knead again till dough comes back to it's original size. Cover with a wet cloth & keep for 20 mins. Knead again till dough comes back to it's original size. Shape into bread loaves. Place in two greased loaf tins. Cover with a wet cloth & leave for 15 mins. or until double in size again. Bake in a hot oven at 450 degrees F for 10 mins. Reduce the temperature to 400 degrees F & bake for a further 15 to 20 mins. Remove from the tins & brush on top with melted butter. Slice after 2 hours.
{To use dry yeast :
Put the dry yeast with the sugar in a cup of warm water, stir & add a pinch of flour. Cover & leave for 10 mins. When the surface is full of froth, the yeast is ready to use. Then follow the same method as for fresh yeast.}

Bread bonda/cutlets
cut the bread up into small pieces and soak in a little dilute moru to which is added salt, chillipowder and asafoetida powder and mix well. meanwhile fry cut onions,ginger ,chilli, and add vege of your choice. Mashed boiled potatoes and peas are ideal. Add the bread to the cooked vege and mix well. Form into balls[bonda] or pattis[cutlets] and shallow fry--serve with tomato ketchup or mint chutney...lovely for teatime
