Healthy appetizers

Can someone suggest recipes for some healthy and easy to make appetizers/starters.

Mixed vegetable soup:
I make this in the pressure cooker directly. Heat 2 tsp of olive oil. Saute onions, celery, carrot (1 cup each) and 1 tsp of garlic and ginger (if you like the flavor) until onion is transparent. Add Salt and pepper. At this point, you could add any vegetable of your choice. I usually add 1/2 cup each of pumpkin (or any squash), green beans (string them and cut them into bite size pieces), green peas, baby corn, sliced mushrooms. You could add green peppers too.. your choice. Add lots of water (as much as you want) and pressure cook these for 1 whistle. After the pressure comes down, open lid and simmer the mixture with some lemon-grass (if you have). Add corn-starch mixture (if you want to thicken the mixture). you could add soy sauce at this point (if you like the taste). Garnish with finely chopped cilantro and serve hot with salt and pepper for your guests to adjust the soup as per their taste.
Chilled starter:
Make thin long cucumber peels (use seedless cucumber), carrot peels and beet root peels, radish peels (use a sharp peeler for this).
Let teh cuucumber peels sit for about 15 minutes until they shed water. Drain the liquid and save.
Mix cucumber liquid with 2 tsp of lemon juice, julienned ginger slices, 2 pinches of sugar or 1 tsp of honey, salt (I use black salt for this) and pepper to taste. Set aside.
Arrange cucumber, carrot, beetroot, radish peels into stacks. Roll them up slightly. Use toothpicks to secure the rolls. Arrange these on a large serving tray. Drizzle the marinade on top of each roll. Refrigerate at least an hour before serving.
