Banana Chips

Hello all! I have been trying for years to make Plantain chips crispy. If I eat as soon as I make them, they taste crispier. But, if I keep them for 1 day, they all become soggy. Can any one help me out here? Thanks.

Hello Min,
Yes, Peanut oil is available in US supermarkets. It is usually kept in the section where they keep Corn, Vegetable oils etc...

Have any one tried Calicut(Kozhikode) chips? They are the best in the world. Calicut halwa has also got the same credit. Otherwise, try to get these two :-)

Hellow there,
Folks who seek to make french frys or potato fingers, try this. After you cut the potato to size soak them in sugar water ( one table spoon for a cup of water 8 ounces) Heat the oil to 250f or low meadium heat for 20-25 minutes. Now put the potatos after drying on a paper towel in the oil and after a few minutes take it out (this is known as blanching- where the fries will be absorbning oil in a semi cooked way)After about 10 minutes put that in the hot oil and now your frys will be like Hardees or McDonald's. The sugar water helps in coloration. YOu may have to fool aound the temprature to get it right.

you can use vegetable oil or canola oil. It works just the same as peanut oil.
