make karuvepillai podi and take with rice, it will be really good particularly mixing with ghee in the rice and some kootu as a side dish. Also, it is good for health.

Hi
You can add ...urad dhal, channa dhaal , red chili salt ,roast in low flame and powder it add to the curry leaf powder which you have and add it to ghee rice, very good for health and also for healthy hair. If you have it as dry curry leaves, roast the leaves also together and powder it.

Thanks. I will try to add this to the paruppu podis etc. Preeti, the rasam tip is intersting. Will definitely try it. My question is should I roast the raw curry leaf powder before use???
"v", the reason I cannot ask my "affectionate" relative because she lives in India. And recently she has been sick, hence no opportunity to talk recipes with her. Thanks for your reply though.

Curry leaves are the young leaves of the curry tree (Chalcas koenigii), a member of the Rutaceae family that grows wild and in gardens all over India. They must be used fresh, as they lose their delicate flavor when dried.
Curry powder can't match curry leaves in any way. Although some people use it in making garam masala powder. But as the curry leaves are dried and powdered they loose their original fresh fragrance. So buying curry powder is a waste of money. Use curry powder as a substitute only if fresh leaves are not available.
Curry leaves contains 66.3 % moisture, 6.1% protein , fat (ether extract) 1%, carbohydrates 16.0 %, fiber 6.4 % and mineral matter 4.2 % per 100 grams. Their mineral and vitamin contents are calcium, phosphorus, iron, nicotinic acid and vitamin C.
Curry leaves are used in ayurvedic medicine and considered as medicinal plant. It is considered good for stomach disorders, diabetes, kidney disorders and many others.

Hi Madhu,
Are u telling that using curry leaves powder(dried) does not have any vitamins?
With kids, it is not easy to chew them if they find one in sambar or in rasam so, they keep it outside of the plate! So, I use to think atleast let them take in a powder form since the ayurvedic medicines are coming in the powder form which is made from dried curry leaves?
Can u pls clarify?

I use curry powder in rasam, sambar, chutneys, adai, uppuma etc. It makes it easy for people to eat it.
