Mushrrooom curry!

Ingredients...
Mushrooms 1 packet each cut in fours
green chillies 2 cut in small pieces
onions 1 cut in small pieces
ginger 1 tablesppoon
garlic 4 cloves
anise,star 2
cardamom seeds 1 teaspoon
sombu 1 tsp
turmeric powder 1 tsp
garam masala 1 tablespoon
hot curry powder 1 tablespoon
chilli powder 1 tsp
oil 2 tablespoons
mustard seeds 1 tsp
Curry leaves 1 stem
corriander leaves 1 stem
procedure.
In a pan, pour 2 tablespoons of oil
add mustard seeds
Cook till it splatters
then add the onions, green chilli , ginger , garlic
stir until brown
add curry leaves , anise, sombu , cardamom seeds and stir
till brown
add mushrooms cut in quarters. Fry well till the water from the mushrooms
disappear.
then add garam masala, chilli powder, turmeric powder and curry powder. mix w/
all the masalas.
Add some water depending on how much gravy you need. Tastes better w/ little
water may be a cup.
add corriander leaves
and cook w/ lid closed.
wait until gravy is semi-thick.
viola and there is your mushroom curry!
Good for vegetarians who want to eat something vegetarian and yet feel a taste
of meat.

I know it will. we make it quite often.
we usually add green peas (pattaaNi) to increase volume. 8 oz of mushrooms not enough for us. Also we use tomato to thicken the gravy.
But what is interesting is the fusion of spices. In my mind kadugu, u.paruppu, k.paruppu, fenugreek, asafoitida black peppercorns is south indian set. cloves, cardemom, aniseed, bark of cinnamon, bay leaves etc would be north indian set. Very rarely, if ever, we mix these two. Cumin and ginger belong to both the sets.

I also use sliced mushrooms with cabbage, cauliflower, potato, etc. vadhakkals. I use whole mushrooms in kurma, aloo-mattar(uruLaikkizhangu-pattaNi), tofu-mattar and similar North-Indian dishes. Mushrooms seem to absorb the masalas very well.
Ravi Sundaram, many communities in Southern India do use the 'North-Indian set of spices' that you have mentioned, in their daily cooking. But the flavors and taste resulting from combining all of these spices might not be palatable to all.

You will get the full favour of mushrooms with less spices. Mushrooms (especialy shitake) are rather fragile. The Chinese stir-fry it with light seasoning. Mushrooms and cubes of tofu with pepper, salt, and a little turmeric can be very nice.

best mushroom curry
= fry green chillies and onions in hot oil
add cinn and cloves
fry til soft
then add two tblspoons of roasted masasla powder
and some tumeric
then add 3lbs mush
with stem of curry leaf
teaspoon of ginger and garlic paste
finely chopped coriander stems
mush have enough water to create good gravey along with water from stems

Regarding Herbalife...WHAT is wrong with YOU???
When I was in India I was literally accosted by someone who I believed was a friend of mine, who tried to push me to buy herbalife products. I was not even slightly interested, but she kept yammering about Herbalife while we were stuck in traffic in Bombay. She pretended to be inviting me to her home but I found out there was not invitation. She wanted me to meet her Herbalife supervisor. She also insulted my driver, a very fit, athletic man of 45, by telling him that Herbalife would help him to lose weight.
You Herbalife people are nothing but scam artists. You are like the people who sell Amway products. The way to lose weight is to eat a variety of foods, a good deal of vegetables, and mostly low-glycemic foods. The portions should not be too large, and for best results one should not eat after 8 PM. Moderate exercise should be taken every day. This is the formula for good health and no one needs Herbalife. One of these days someone will sue that company and put it out of business, and when that happens...Good riddance to bad rubbish.
