PAV BHAJI:
in hindi pav means bread & bhaji means curry.
this is a very simple tasty dish which is usually a speciality of MUMBAI.
ingredients
onions 2
tomotoes 3
potato 3-4
green peas 2cups
caspsicum 1
garlic pods 4-5
greenchillies 4-5
corriander leaves
tomato puree 1/2 cup
pav bhaji masala ( any branded)
oil
salt to taste
lemon ,butter, onion silces for garnish.
pav /burger bread ,butter
Method
BOIL the potatoes ,green peas& capsicum
mash the boiled potatoes & peas.
cut the capsicum into slices.
heat oil fry the onions till golden brown.now add the garlic & green chillies..add the tomatoes & fry till the oil comes to the edges,now add the tomato puree & the other boiled vegetables .add 2-3 cups of water & season with salt & pav bhaji masala as required.cover & allow it to simmer.
finally garnish with lemon onion slices & a tsp of butter.
serve hot with toasted bread/pavs.

Hello Bhargavi! My apologies to you - if my thoughts are hurting your recipes. There is a business reason why one does not use cauliflower and carrots. Though carrots is rarely used. The reason is the cost factor. I did not say it is mandatory to use it. I said, "you could use it". Yes I overlooked the Fresh tomatoes you did mention in your recipe. My apologies for that too!
And as for the other stories of foods, I thought it would be a good idea to share it with all readers. If you know about it, well it does not hurt others knowing it too.

You have mistaken me . I guess u have got hurt by my comments. I was just telling you abt myself and I have seen many many people tell me not to use carrots in bhaji as it sweetens the taste . So i shared my views.
People don't understand the local terms. So i go in with the translation/the common words for them.
pls go ahead and post your recipes. I have been noticing that you have a tremendous knowledge abt various recipes. This forum hub needs the advises and comments from knowledgable people like u.
Again sorry if i have hurted u in my comments.
Good should be taken from everyone.thats what i follow.

Helo Bhargavi! Me hurt - not at all! I do appreciate the respect bestowed on me. I am pretty thorough in the subjects I know. You might have noticed, I do not jump into threads which I cannot comment on. In my long and memorable association with the culinary arts - I have gone beyond Recipes - measurements/Recipes probably are memorised in my hand movements. I always work backwards with a Recipe, visualising the product first, followed by presentation, method of cooking and lastly the ingredients.
You are right in saying carrots make a dish sweet. Basically carrot is a not so favored vegetable on the dinner table. The best ones are the popularly called Delhi carrots. They have real meat in them and can be blended with other veggies in making Pao Bhaji. Smaller Carrots which are the Englih carrots stand out and do not go well in combinations with other vegetables. A good example is the "Gajjar mattar" - which is a home made favorite amongst the North Indians. If you have tasted this delicacy, your opinion about carrots might change.Hey I might be wrong altogether. Because tastebuds are so personally private in matter.
I do not quite understand what you mean by "local terms".
BTW - Personally I hate to eat Carrots.

Hey Funcook,
I want to say u have a nice nickname.
Frankly, i think cooking is fun. Most of time my experiments prove me wrong,but thats never hindered my enthusiasm.
I like carrots raw. I hate them when they r cooked. I don't know why,but it kinda tastes odd. I prefer spicy food. Carrots ---well i have not tried delhi gajjar. But i will definately try.
Local Terms means people in Mumbai/maharastra may know batata vade and vada pao.But apart from that if u tell this to someone from other regions they may not understand/not show any intrest in that recipe. for them Bonda makes a familiar term. Same way for usal pao ,misal pav,vada usal ,bhajji pav,bhajji samosa, etc . I wanted to give the recipe of all these in this thread. But i restricted myself to more used food and famous ones.
By the way what do u do? Are u a cook or something?? just curious.

Hello Bhargavi!Funcook is not my nickname - its a pseudonym.
Spicy foods is a misnomer. You probably mean Hot foods. Spicy for that matter is any foods with spices. The only spice that could make a food hot is the peppers.
Normally these are used in very small quantities in foods. Its more of a table accompaniment.
Spicy sounds better than hot foods, ergo its a more popular term with Vendors. Our usage of spice in home made foods is limited to flavoring the food. Spices also help in preserving the food.
Hot foods are generally the ones that have an abundance of chillies.
Enjoy your cooking and feel free to ask me what went wrong kind of questions. I could part with my Recipes too, if specifically asked.
I'd prefer not to answer your curious question. It does not matter what I do for a living, as long as I am too glad to share my knowledge. Thanks
