kadala Curry(cont...)
In a pan roast the shredded coconut to light golden colour add dhania powder and chilli powder and saute after the pan is removed from the stove. Move it to a seperate plate otherwise the heat of the pan can burn the mixture.
Take 1 tea spoon of oil saute the small onions and the 6-7 curry leaves and grind it to a coarse paste with the coconut mixture above
In a vessel saute onion, ginger finely sliced and slit green chillies and rest of the curry leaves. (sprinkle a pinch of salt to get the onions sauted fast)
when the onions turn pink add the chana and turmuric powder chana and salt let it boil
Add the ground masala and let it boil for 4-5 minutes.
Now season it with some mustard, red chilli, & finely chopped onions.
Hope you enjoy this dish.

There is no ration for dhania to red chilli powder.
Use of chilli powder depends on how much you want the curry to be. then again each chilli powder packet has a different spice level depending on what variety of chilli they used.
Paprika a chilli powder available in Ameican stores are less hotter than the Indian store brands It also gives color to the dish.
Start with half tsp when you grind the masala.
when the curry is boiling taste it , if you want it more spicy just sprinkle some more chilli powder .
Just in case your paste was too hot when you blend it, add little more sauted coconut & onions it will bring down the spice.
Happy cooking
