Alfalfa is a herb that belongs to a family called 'Fabaceae' - the Legume family. -probably introduced to India. It is not a grass(monocotyledon)
Botanical name: Medicago sativa
Tamil Name: kuthirai masAl
ฬพขจร มบก๘
Leaves and seeds are rich in proteins used as food for horses - hence the name kuthrai masAl.

Try it with Ranch dressing. It tastes good. I haven't heard of any specific cooking technique for Alfalfa. If you want, I think you can add it to some spicy porial along with other vegetables. Just my idea. Try it!
