Vegetarian biryani

Simple 'tamil' style biryani. In a large pot , heat oil and drop a few pattai(cinnamon), sombu(aniseed), krambu(cloves) and elakkai and jeeragam(cumin seeds). Next add ginder-garlic-greenchilli-greencoriander paste in oil, till oin leaves the paste. Add thinly sliced onion and fry some more. Add chopped pudina (mint) leaves and fry some more. Add sour cream and red chilli powder and fry some more. Add chopped vegrtables (skinned potatoes, carrots, beans and cauliflower) and saute. Add washed rice and mix with everything. Add water - 1.5 cups for every cup of rice. Add salt - 1 spoon for every cup of rice (add an additional spoon finally if you are making a spicy biryani, that is if your green chilli/ red chilly ingradients are on the higher side). When the water starts boiling, 'sim' the flame to minimum and cover the pot with its lid. Open after 10 minutes, add a little lemon juice and stir biryani over (this is to keep the rice 'grain separate'). Close and let be for another 15 minutes. Put off the flame. Open the lid after yet another 10 minutes and your biryani is ready. Garnish with chopped green coriander and browned onions.
Side dish is is 'Tamil' style Kuruma (made with coconut milk- coconut milk is available in powder form).
