hello,
i an newly married and i now i was in usa.gettting a nice idli for me is a very difficult problem.i tried a lot.but my flour doesn't get fermented even its placed in the oven.what i do to get idlis for me?i need ur advice.

Hai sneha,
I had the same problem too. I started using ponni boiled rice and full urud dhal in 6:1 or 6: 1 1/4 ratio. After grinding beat the whole batter with your hands for 2 mts. Keep it in the oven with the oven light on for overnight.(Do not start the oven).Next day morning make idlis. Let me know how did it come?.

To make it Ferment, add a little Yeast. Available in wall mart in bakery section.Also it depends on climate. If you live in South(TX,AZ,FL,CA,GA,AL)fermentaion is quick. Colder regions like (WI,MN,Upstate NY,ND,SD,WA )might take longer.

hi,
i live in NJ. initially, had the same problem, but slowly, u will be doing great in dealing with idly. Hope the oven should be attached with the gas stove and hence, the oven will be getting 24 hrs. flame, there should not be any problem.
Before that, after grinding idly batter, make sure that u mix well with salt to make fluffier idlies.
If u dont get any good results, then think about yeast because, i dont have oven in my new house, still, managing with the heater vent. It is coming out very nicely. So, give a try..Best of luck!!

Try the following for the best results:
1. use the idli rice for idlis.
2. Soak the urad for not more than 2 hours.
3. Soak the rice for at least 4-6 hours.
4. Use the water used for soaking the rice to grind the rice.
5. In the winter, leave the dough in the oven with the lights on. (do not preheat the oven)

hi,
i want to know how to make idlis in conventional oven or microwave oven as we do not have a proper idli making vessel and it is not available in florida where i live.

Hi shrabani
U can use the microwave egg pouch which is available in american stores . Just spray the non stick cooking spray like pam on the pouch, add the batter , microwave it for 90 secs(time depends on ur microwave) u will get good idlis .

Add 1/4 tsp Baking Soda + 1 tsp Sugar for fermenting Idli flour.
