how to cook tasty sambhar and rasam

Hi radha,
if u want to make hotel sambhar(yummy!!) follow this reciepe..
Sambar:
onion-1
tomato -1
potato-1(optional),
also u can use any other vegetable..
tamarind -lemon size
corriander leaves- little
asafoetida--pinch
salt--little or as needed
sambhar podi or chilli podi
paruppu
masala- 1 tsp
Masala:
corriander seeds--2 tsp
methi(vendayam)--1 tsp
red chillies--7-9
cumin seeds--1 tsp
chenna daal--1 tsp
fry all of them and make it as a powder and use them as and when needed.
dont add coconut to this powder if u want to keep this powder for a long time, or else coconut can also be added.
fry onion with little oil, and when soft, add tomato and boiled potatoe. add tamarind water to these vegetables, salt and chilli powder. let it boil. finally add paruppu, asafoetida and masala powder. decorate with corriander.

what is sambhar podi or chilli podi
paruppu .............can u kindly explain the whole reciepe in detail.........i am north indian so i wanna give it a try.......and i have never had potato in sambhar there r veges like
beans ,loki or may be

The credit for making a perfect Sambar or Rasam, goes to the ingredients and its proportion.
To get the authentic taste, I recommend home made powder, which would be handy and tasty, when it comes to easy cooking.
Try this recipe. Go to

If you want to make the araithu vitta sambar - here is the recipe:
In a pan pour a teaspoon of oil and fry urad dhal, chana dhal, coriander seeds (dhania), Jeera, red chillies, hing, curry leaves. Once these ingredients become golden brown, remove them and then add coconut pieces and slightly warm them (especially if you freeze the coconut pieces like I do - it thaws the coconut and makes it easier to grind).
Grind the above mixture with 1/2 onion. Add it to the dhal, vegetable mixture. Add tamarind paste, a pinch of brown sugar (jaggery powder), salt to taste.
Add coriander leaves at the end.
Variations:
If you like tofu, reduce the amount of coconut and grind tofu and add to the sambar.
You can fry 1/2 tsp of Methi seeds and 1 tsp of rice and grind with the other ingredients.
