South Indian curries

While making south indian dry curry how to cook it exactly until done. I normally either over or under cook it. Veggies like cabbage, cauliflower, carrot, beetroot, beans. Is there any tricks to make it tasty by adding any special ingredient?
Also how to maintain the fresh green color of beans and spinach while cooking.
Tips for making crispy and tasty ladys finger.

For cabbage and carrot, u can cook directly without adding any water and doing seasoning with urad dhal, red chillies, mustard, curry leaves, then veg., once it is done, can add coconut, this is one standard method. some people prefers either half boiled moong dhal or channa dhal which gives u extra taste. u can try with green peas also.
for beetroot and beans, it is better to boil in the cooker. for beans, the method is same as above. but for b.root, can add onion also. but i like b.root kootu, not curry. so cant give u a proper solution.
for c.flower, can cook directly, dont add water. just do seasoning and finally can add red chilli powder, coriander powder and cumin powder. that is enough. should keep sim so that the color wont change.
you dont have to worry about the other veg., except for cabbage and c.flower because their colors will change very quickly and also, it has a maximum chance to get burned.
with spinach, u can do simply seasoning and fry it in sim. do the potato int he same way, mix them both. it is one dry curry. or can do paruppu usili just like with other veg., like carrot, cabbage and beans.

Adding a pinch of baking soda to the veggies will help retain it's colour.
