idli&idli sambar

Came to canada just 2 months back.
I have been trying idli with ponni in the ratio
ponni parboiled (3 cups )urid dhal (1 cup)+little fenugreek.
Can anyone tell me what rice is best for idli here and what ratio gives soft idlis.
Also the english name of pasi parupu which we use for sambar with the recipe for pasi parupu sambar ,which we used to have for idli at home

I am in canada too.Nice to hear u.
i have two combinations
first:
Kingsfood parboiled rice(available only on save-on-foods)------------3cups
fortune rice(superstore)---------1cup
urad dhall--------1cup+1 spoon fenugreek.This is like malligaipoo idli.try u wont believe it.
second:
fortune rice-------------2 and half cups
unclebens parboiled rice------1 and half cups
(any parboiled rice(1 & half) with fortune rice(2& half) make nice idli)
urad dhall -----1 cup+fenugreek
If u live in toronto in srilankan stores u can get ponni pulungal rice .i think that is the best.since i'm not in toronto i cant get that.but both of the above combinations works good.try and let me know.
I think the english name for passiparuppu is Mung beans.

The purpose of using fenugreek is to avoid the dough getting fermented too much.one spoon of fenugreek seeds is enough not more than that.

Hai everyone,
i tried with ponni polungal 2 cups & ponni pachai 1 cup & urid dhal 1 cup & i tsp fenugreek.
Idli comes but never soft why?
I even allowed the batter to ferment very well.
Iam trying with idli thatu in cooker .
after steam comes i keep in min flame for 5 min

May be week-end i will try your fortune rice recipe.
but u have said ponni works fine.
why does'nt it work good for me.

My mom says that if you avoid using fenugreek in your idli batter,idli comes soft.However,you can use fenugreek in dosa batter.This is y your idli is not soft,try avoiding fenugreek

Try adding a little bit of baking powder in the batter..it'll make your idli soft - thats what i do nowadays.

Here is a foolproof recipe for soft idlis.Just try this and let me know.This tested alot by me and many of my friends.
If you are getting SONA MASOORI rice in indian stores over there in canada the Rasio as follows
If you are using wed grinder the rasio is 2:2:1
2 cups - ponni parboiled rice (preferably lakshmi brand)
2 cups - sona masoori rice (preferably lakshmi brand)
1 cup - urad dal
fenugreek - 8 seeds
if you are using any INDIAN MIXIEs like sumeet etc are BLENDERs like OSTERIZER etc the rasio should be
4:1 (4 parts sona masoori and 1 part uard dal ) along with 8 fenugreek seeds.
The good thing about sona masoori rice is you can grind it in the mixie or blender super fast.
also mixies or blenders won't get hot like When we grind ponni parboiled rice.
you can also use it for sweet pongal,ven pongal,adais,athi rasam or any recipes which call for Raw rice (pachchai arisi).The result certainly will amaze you. Hence you Don't have to Bye Raw rice seperately.

If you are grinding idli batter in huge amount like most of us likes to do and using it later for 2 to 3 days you may notice that the idlis won't come softer like the 1st day.
Well there is one good tip to avoid this problem.
after grinding the batter just divide them in equal portions(depending on how many days you want to use them.
say if you are going to make idlis for 3 days then put the batter in three SEPERATE VESSELS and then ferment it.After fermenting can keep one batch outside and store the remaining in fridge for future use.
everyday you will get softer idlis from this meathod. try this and you 'll be very happy.

If the idlis are coming soft the first day but not the second day or third day? - try to take out the dough from the fridge and bring it to the room temperature before you steam it.
Or make the idlis the first day and then store in the fridge. To reheat, place the idlies in a corning plate, cover with another plate and microwave it (one minute on each side if you heat six idlies at a time).
Or you can steam it in the Idleez steamer or regular six quart vessel.
When you steam the idlies, do not cook for a long time. If you overcook it, the idlies will harden.
If you use pressure cooker, do not use the weight.
