Spicy peanut fry..

Hi,
Tried this roasted peanut (mixture of red chilli powder, salt, besan flour with peanuts and frying in oil), but somehow, all the peanuts were not crisy, some were mushy.
In the shops, I saw all the peanuts looks separate and the outer portion will also be crispy, but mine came out with sticking to each other( i was separating while frying) and also the outer portion was not looking like in the shops. Where could I have gone wrong or anyone know recipes for this.
I used in this ratio 1 lb peanut: 1cup besan flour . Hoping that anyone can help me out in this regard.

Hello R!
You can add 1/4 cup rice flour. 1sp asafoetida powder, a handful of curry leaves and 1/4sp soda bi carbonate to the above mixture, mix well and try again. You can add one handful of peanut into the simmering oil, and after a few seconds, if you seperate them with a big spoon, they will immediately seperate.

Dear Mrs. Mano,
For the spicy peanut recipe, is it the dry spice mix alone coated on to the peanuts without adding any water, or should we add some water for the mix to stick on them before frying? Please clarify. Thanks.

Hi Chitra,
You need to add little water to the mix Mrs.Mano has specified. It has to be very thick dough. The way I make it by taking some dough on to the hand and a handful of peanuts, and then rub them nicely so that they get coated evenly and drop them in the oil.
This is what I know. Maybe Mrs.Mano will be able to clarify it in a different way.

Dear Chithra,
What CI said about the consistency of the dough is correct. Put the peanuts in a bowl. Add enough salt. Then add all the spices. If you grind the red chillies with some garlic flakes instead of the chilli powder, the taste will be delicious. Mix all the things with very little water-like pakoda mix. Then drop a handful of this masala in the simmering oil and after a few seconds, seperate the masala with a spoon quickly and they will seperate immediately.

I forgot to add one thing. I will not measure the peanuts and gram flour.According to the peanuts, I will add the gram flour.We can guess how much gram flour is needed to make a thick masala when we see the amount of the peanuts. Then I will add the the remaining spices according to the gram flour.

Hi Meena,
Long time no news from you.
Peanuts are with skin. If you don't like the skin of it, you can use ones without skin too. I have found that the dough sticks better on the ones with skin. This is my opinion.

Hi Chitra,
Found the below in a website, if u want, can add it to ur database. Yet to try this version.
Fried Peanut Crunchies
Ingredients
1 cup shelled dry peanuts
3/4 cup gramflour
2 tbsp. rice flour
1 1/2 tsp. red chilli powder
1/4 tsp. cumin seeds crushed coarsely
1 tbsp. hot oil
1 pinch citric acid powder
Salt
1/4 cup water
Oil to deep fry
Method
Mix all ingredients well, except peanuts.
Add peanuts, coat them evenly with mixture.
Heat oil in a frying pan.
Take a lumpful, drop coated nuts individually in hot oil.
Drop enough to use all oil.
Fry on medium heat, till light golden.
Drain, place on absorbent paper to soak excess oil.
Separate any nuts stuck together.
When cool, store in airtight jars.
Add water a little at a time, since the coating paste should be quite
thick. Alter the quantity as required.
Serve with drinks, cocktails or as anytime snacks.
