This spicy mouth watering combination has been favourite of my family and friends. Whenevwer I go there I just can't resist to indulge. Back in Australia I have tried making Chole(using whole blue peas)but I am still looking for a recepie for the Kulcha's. To describe it it's thin white bread possibly baked almost the size of chapati, with one side smooth and the other side like sliced bread. It is fluffier and bit elastic(i.e., not crumbly)may look like very thin pita bread to some people.
To cook Blue peas:
Just boil blue peas(500gm) in pressure cooker to soft almost mushed texture drying all the water(3-4ltr) in the process, add some coriander(1/2tsp) powder, salt, red chilli powder, tamarind diluted in 1/2 cup water, lots of chopped red onion, chopped green chillies(more the better), coriander leaves, 2large chopped red tomatoes, lemon/lime juice.
Mix them together. have them with bread, chappati, naan, or if you can make kulchas.
Please let me know if anyone can figureout the recepie for Delhi style Kulcha(not Bhaturey).
Thanks Friends

The peas Europeans use for Ham and Pea soup. I am sure u can buy them from any Indian shop as well as supermarkets. Here in Oz they call them Blue Peas.

oops i foget to write recipe...here it is
White flour : 100 gms
Curd : 100 ml
Cooking soda : a pinch
Onion : 50gms
Oil : 2 gms
Method :
1. Make dough out of white flour and curd adding a pinch of soda and salt.
2. Kkeep it overnight.
3. Roll out chappatis. Place a spoonful of chopped onions and close it.
4. Roll out thin chappatis and cook on a hot tawa.
This can be made without onion stuffing as plain kulcha and the best combination is masledar chole....
