Any receipe for vegetarian chinese cooking ?

I am a strict vegetarian. Do you know of any receipe for chinese vegetarian cooking ?
1. Rice / Noodle varieties
2. Side dishes

preparation of noodle
1pkt of plain noodles
2 small onions
2 pearls of garlic
1 cup finely sliced vegetables(carrot, capsicum,beans,peas)
1/2 cup spring onions
4tbsp soya sauce
3tbs tomato sauce
salt ( if necessary cos soya sauce contain salt init)
3tbs chinese sesame oil(if available) or sunflower oil
6 red chille soaked and ground into fine paste
method
cook the noodles and keep separately.
In a kadai heat the oil and add the garlic,onionand chillie(make it coarse paste with a pestle and mortar)until oil oozes.
then add the vegetables except capsicum and stir well.
add soya sauce and tomato sauce and stir well. add capsicum and cover it for 5 min.
when all the vegs. r cooked add the cooked noodles.
stir well and at last add the finely chopped spring onions and stir well.
now the noodle is ready to eat.

i want to know how to prepare perfect gobi manchuria ... iam found of fried rice ,manchuria and chinese noodle...the problem is i am in ireland i cannot get that manchuria so plzz help m ehow to prepare the gobi manchuria

Vendakai Chinese Style:
Ingredients:
Vendakkai - 500 gms
Oil for frying
Onions - 1 Sliced
Green Chillies - 3 Sliced
Ginger Chopped finely - 2 tsp
Garlic Chopped finely - 2 tsp
Soya Sauce - 2 tsp
Ajinomotto salt - A pinch
ground Pepper Powder - 1tsp
Salt as required.
Trim the vendakkai edges and cut them into 2 inch pieces. Heat oil in a pan and deep fry the vendakkai until crisp, set this aside on a kitchen towel to drain excess oil. Heat about 1 tablespoon of oil in a pan and fry the onions until golden brown, add chopped ginger, garlic and green chillies, fry them all for a while, add ajinnomotto and soya souce and then add the crispy vendakkai, fry for a minute or two and remove from fire.

Cauliflower Manchurian:
Cauliflower - 1 medium size
Oil for frying
Sauce
Chopped Ginger - 2 tsp,Chopped garlic - 2 tsp,
Spring Onions - 1/2 cup,green chillies chopped - 3 to 4, Corriander leaves - 1/2 cup chopped ,Cornflour - 1 tblspoon, Soya Sauce - 1 tablespoon, Tomato Sauce - 1 tablespoon, White pepper powder - 1 tsp, Salt as required.
For the Marinade:
Cornflour - 1/2 cup, Self raising flour - 1 table spoon, Bhajji maavu or gram flour - 1 tablespoon, salt as reqired, Chillipowder - 1 tsp or even more if you like it hot.

Cauliflower Machurian Contd...
Method:
Clean and cut the cauliflower into medium size florets steam them or boil them in salted water for about 5 to 10 minutes, we dont want them over cooked. Drain the excess water and set the cauliflower to dry. Mix all the ingredients for the marinade with little bit of water until nice and thick with no lumps, the batter should not be runny. Heat oil in a pan and dip the cauliflower in the batter and deep fry them in the oil until golden brown. Set them aside.
Now the sauce, heat about 2 tablespoons of oil in a deep pan and add the chopped ginger, garlic, green chillies, lower the flame. Mix the cornflour , tomato sauce, soyasauce and white pepper powder in i cup of water and add this to the pan add salt and leave it until the sauce thickens, now add the fried cauliflower and keep on low fire for not more than 2 minutes. Garnish with chopped corriander and spring onions.
