how to make kulfy ice cream?

Kulfi or Icecream - what would you prefer. No they are not the same. Kulfi is made with reduced milk, flavored with nuts and essence and frozen in mental moulds. Icecream is a revolutionized product and is available globally. Its made with enriched milk using cream, which is whipped to icorporate air. The textures of these two products are different.
To make kulfi use milk. Bring it to boil, and reduce heat. Cook for a further 1 hour till it is reduced to 2/3rd or its original volume. If you think this is too hard, use half and half cream. This is already thickened and enriched. Follow the same process, only for a less amount of time. Add sugar to sweeten and cook for a further 5 minutes. Remove from fire, cool the resulting kulfi rabri in an open container. When cold and thick, it has a granular texture, add flavors. The most popular ones are in combination of; cardamom and saffron, pistachio and saffron, almond and cardamom, mango on its own. Mix well, and pour in kulfi moulds available in Indian grocers. Freeze overnight. To remove, hold mould under cold running water for a few secs only. Use a fork, to pierce at the top, turn and remove in a plate. Serve cut in slices. Traditionally kulfis are frozen in motion (and so are icecreams in huge machines), meaning the moulds are all placed in a huge wooden container, with lots of crushed ice and rock salt and shaken until the kulfis are frozen.

In your blender - add condensed milk, pistacios and cashews adn blend to a fine paste. Now add Richotta cheese (same quantity as condensed milk) and blend again to fine paste. Add whipped cream and blend again till it becomes homogenous.
You should have enough sugar from condensed milk and whipped cream - else you can add more. At this time add mango pulp if you like mango Kulfi instead of Pistacio and cashhews (you should eliminate them up front!!!)
Fill teh mix into Kulfi containers or freee them on a pan adn enjoy!

this recipe according to me is the easiest way of making kulfi.
take equal portions of condensed milk, evaporated milk(whole) and whipping cream. whip all this in a blender with a digestive biscuit(somthing like marie or its equivalent). remove add finely chopped pista and freeze.

all the recipies of the kulfi seems yum. but how can we really make a good kulfi if we dont know the actual quantities of each ingredients. thanks again for the recipies. i will definately try them.
