The basic recipe is that u have to grind coconut, red chillies and jeera for the veggies like beans, snake gourd, cabbage etc. for ashgourd, u can add little dhania. boil the veg., with channa dhal or moong dhal and add the ground paste with little rice flour which makes the kootu thick. season in oil with mustard, curry leaves and urad dhal. Garnish with coriander leaves.
apart from this, there are varieties of kootus like puli vita kootu for cluster beans and poricha kootu without adding red chillies or mixed veg., kootu.

Hi ,
Kootu is very simple . Pressure cook vegetables like cabbage , beans , cauliflower , white pumpkin along with moong dal , salt and turmeric powder . grind cocnut with green chillies separately . Add to the cooked vegetable +dal . Garnish with mustard , urad dal & a few dried red chillies

can we use cauliflower alone to make kootu? let me know? also tell me the amount of chillies and coconut? is it red or green chillies?

with cauliflower, curry gives better taste than kootu (for rice). still, i give my version.
for a c.flower, u can use 2 or 3 red chillies, 2 tbsp jeera and a handful of coconut. grind them and keep aside. boil the veg., with channa dhal, make sure that the veg., does not get mashed. mix everything with the ground mixture and add salt, rice flour and turmeric. garnish with coriander and curry leaves. finally do the seasoning also.

There is one more way of making kootu.
we call it as pal kootu.
Boil the vegetable(carrot, cauliflower, cabbage,
pumkin any one of these).
grind pepper, seeragam, salt and some dal.
after cooking these finally add a cup of milk
and leave it for a few seconds. Then taste
it.

Hello gaya3!
here is the recipe for appalakoottu which is taken from a chettinadu cookery book.
APPALAKOOTTU:
Cook 1/2 cup bengal gram and 1/4 cup split green gram in enough water.Do not cook till the dhals are mashed and thickened.. The cooked dhals must be in 'killu padham'. Now add 1 chopped onion, 1 chopped tomato, 1/2sp chilli powder, 1sp turmeric powder, ginger&garlic paste-1/2sp, 2 slit green chillies and enough salt to the dhals. Let it simmer for a minute. Crush 8 fried pappads[medium sized appalams] and add them to the dhal. When the onion is cooked add 2tbsp shredded coconut and mix well. Put off the fire. In a seperate kadai pour 2tbsp oil. add 1sp mustard seeds and when they splutter add 1sp split black gram and some curry leaves. Then add 1/2 sp garlic and ginger paste and fry in a slow fire until the raw smell disappears. Pour this to the dhal and mix well.
N.B: I think you can test with appalapoo instead of appalams. But you must be careful in adding the salt as the appalapoo is always having extra salt in it .
