this is hema, how are u? i saw your website this is very useful for me. thank you very much.
but right now i need how to make "MUTTAI PAROTTA" ( i don't know how to make parotta also)

Hello Pavithra!
In hotels they do not add soda bi carbonate, and baking powder when preparing Parottas. Here is the recipe for layered Parottas.
PAROTTA:
Sieve 1kg plain flour. Add 1 egg, ¼ cup oil, 2tbsp sugar, ¼ cup milk and ¼ cup ghee to the flour and mix well. Knead to a smooth dough by adding enough water. Keep covered for three hours. Pat and knead well again till the dough becomes very smooth and elastic in nature. Make orange sized balls from the dough and roll out in to thin chappathi. In hotels, the professional cooks will make it flip in the air to a very big transparent circular layer and then they will fold it and roll into round balls again. We could do like that only if we are trained in it. So we can fold the chappathi like saree pleats and then make it into a ball again. Spread ½ to 1sp oil on the ball and keep them covered for some time. Then pat the ball gently on top and flatten into thick parottas using the hands. Heat the tawa and cook the parotta on both sides. After removing it from the tawa , press and pat on the sides to loosen the layers with a neat white thin towel when it is hot.

It is not mine but Mrs.Mano's recipe which i had copied for you from another thread; since it has egg as an ingredient, i thought this is the one you were looking for. I'll find out a recipe for the egg parathas as i have no idea myself as to how to make them ; maybe Mrs.Mano can help you.

Hi Hemakk,
A friend of mine in the neighbouring apartment had this book '100 egg recipes' by Mallika Badrinath which has the recipe of Egg Parathas as given below.
EGG PARATHAS
Ingredients:
Maida - 3 cups
Eggs - 2
Sugar - 1 tsp.
Salt - As required
Oil (for the dough)- 2 Tbsp.
Baking powder - 1/2 tsp.
Method:
Sieve flour with baking powder & salt. Add sugar & mix well. Make a dent in the middle, break the eggs, pour in & mix with hand properly. Add enough water & make into a soft pliable dough. Pour oil on top, cover & set aside for 2hrs. Take little dough, make like a chappathi, spread little ghee on top, sprinkle little maida, fold it as we do for pleats. Turn round & make a ball again. Roll like a thick paratha; toast on a hot tawa using enough oil till brown on both sides. Serve hot with any subji.

thanks for your imm.response.,
yes,you said that the receipe for only plain parathas. yet i didn't taste that Muttai paratha, but my hubby told me that Muttai paratha is making with plain parathas, and he didn't know well the ingre., but he like the taste,( my hubby told me that first you fry the onion,tomato, other masala powder,kurma,then put the pieces of plain parathas and then add egg fry it very well just like muttai porriyal.) that's all he knows, i don't know the masala powder, that's why i'm wondering to make it.

hello hemakk,
here is the recipe for muttai paratha.
onions, tomato, lot of curry leaves , for 1 paratha , u can use 2 eggs ,coriander, pepper, salt , little chilli powder , gravy usually in hotels they use the non-veg gravy little bit but it is not compulsary but u do that paratha with coconut gravy one day then store the remaining dough in the fridge so that next day evening u can use the gravy and paratha to do the muttai paratha .
method :
first make parathas and cool it then make into small bits,keep the kadai and season mustard , first fry onion with lot of curry leaves and the 1 green chiili (should be chopped as slices), and fry tomato nicely until gets mashed and put paratha bits add chilli powder little bit fry till crisp ,beat the egg add salt and pepper with that keep aside ,pour the beaten egg over the parathas and now add the leftover gravy if not leave it .fry nicely little bit roasted and serve with coriander leaves.
for egg gravy :
coconut 1/2 cup ,corainder seeds 1 tbsp,
jeera 1/4tbsp,ginger,garlic,cinnamon,aniseed, red chillies grind to fine paste.
make jeera coarlsy powdered , now put the kadai and add oil the add the powedered jeera then onion chopped to strips with curry leaves till golden brown color .then remove form the kadai keep it aside.
now chopp the tomato and fry it the add the groun paste and add little water let it boil for some time until the aroma goes and atlast add teh fried onion on the top and boil once.
in the dish keep the boiled egg cut into halves pour the graveon the top egg gravy is ready this plain gravey can be used for muttai paratha .
note:
if u want to store the gravy for next day keep the egg seperatly , as cannot be used next day keep it in the serveing plates.
