Hi Menaka,
I too were searching for this recipe as my husband is a big fan of plum cake and won't eat any other cake.

Fruit cake from a kerala site
1 Margarine - 100 grams (3.5 oz.)
Ghee - 125 grams (4.5 oz.)
2 Powdered sugar - 300 grams (10.5 oz.)
3 Egg yolks - 4
Vanilla essence - 1 tsp.
4 Preserved orange peel cut into small pieces - 100 grams (3.5 oz.)
Raisin Chopped (cut into half) - 400 grams (14 oz.)
5 Cashew nut chopped fine - 100 grams (3.5 oz.)
6 Sugar - 4 des. sp.
7 All purpose flour - 250 grams (9 oz.)
Baking powder - 1 tsp.
Cinnamon -2 pieces
Cloves - 6
Nutmeg -very little
8 Milk - 1 cup
9 Egg whites - 4
10 Lime juice - 1 des. sp.
Sugar - 4 des. sp.
Directions
Soften the margarine and ghee and mix with sugar and cream it soft.
Add to it yolk of the egg one by one along with vanilla essence. Then add the 4th item and beat well for sometime.
Add the cashew nuts also in a hot skillet put 4 dessert spoons of sugar and mix stirring continuously till it turns black.
Add a cup of water into it and stir without forming lumps. When it thickens remove from fire and when cool add to the above cake mixture. It adds taste to the cake. But if it is over burnt it will taste bitter.
Mix the all purpose flour, baking powder, powdered cloves, cinnamon and nutmeg and alternately add with milk and slowly fold in. Whisk the egg white fluffy and sprinkle the lime juice and sugar to it and mix. Add this slowly into the cake mixture. In a greased papered cake tin bake this in a slow oven at 300 degree

SEED CAKE
Ingredients
Maida 1/2 kg. (500 gms) , Butter 1/2
kg (500 gms), Sugar 1/2 kg (500 gms)., Eggs 15 Big or 20 small., 2 level tsps. Baking powder (should be mixed into the Maida & kept ready. Cake seeds 5 gms or 2 level tsps. A pinch of salt.
Method
Churn Butter first till light & fluffy. Add Sugar & continue to churn for 1 hour., add beaten eggs & continue to churn, add the Maida that has the baking powder mixed - & continue to churn (mix well) for another an hr. to avoid lumps., add Cake Seeds - mix well - pour into greased trays & bake.
P.N.
SUGAR should be powdered on the mixie for all cakes. Eggs should be beaten well on the mixie too.
**BUTTER - If the Butter is salted - do not add a pinch of salt.

TEA CAKE
RECIPES

Tips
*** The same recipe of Tea Cake could be made as Fruit & Nut Cake., only add say 150 gms Tuttifruiti & 150 gms cashewnuts cut into small pieces., for essence use 1/4 bottle Vanilla Essence & 1/4 bottle Almond essence.
INSTEAD OF TUTTIFRUITI, CHERRIES TOO CAN BE USED.
If your making Tea Cake, use half a bottle Lemon Essence.
SUGAR should be powdered on the mixie for all cakes. Eggs should be beaten well on the mixie too.
BUTTER - 500 GMS - If salted butter is used, pls do not add a pinch of salt.
**PACK OR WRAP CAKES ONLY WHEN COLD.
