I've got this great recipe for Crab in gravy (Nandu Kara Kuzambu). My cook, though a Goan has been using this receipe to turn out a delicious dish. Give it a try.
5 crabs, 150g onions, 200g tomatoes, 1 1/2 grated coconuts, 50g ginger-garlic paste, 15g crushed peppercorns, 10g aniseeds, 5g cinnamon, 5g cloves, 5g anardana (pomegranate seeds), 10g garam masala, 10g cumminseeds, 50g chilli powder, 25g turmeric powder, 10g urad dal, 2 sprigs curry leaves & 50g coriander leaves.
Grate the coconut and make a paste along with the ginger-garlic, and the peppercorns. In hot oil, saute the aniseeds, urad dal, garam masala and the cumminseeds.
When it stops spluttering, add curry leaves and chopped onions and fry till light brown. Add the ground paste, chilli and turmeric powders. Add a little water, followed by cracked fresh crabs, chopped tomatoes, water and salt.
Simmer till the crabs are cooked. Serve hot in a dekchi, granished with coriander. tomato slices and fried red chillies.
Give this recipe a go and let give me a feedback. You could reduce the quantity of water to get a drier and thicker base (masala paste) to coat the crabs.
