I would like to know which is the best atta flour or chapati flour in the USA?
A) Maya
B) Laxmi
C) Golden Temple
D) Swad
E) Nirav
F) Sujata (a new brand)
G) any other brand not listed above (please give name)
i would also like to know how incorporating soy flour works in the roti process?

Hi,
Don't know about the best brand of atta, as I don't live in the US.
But about the addition of Soya Flour - I have been informed by a dietician that the flour is usually made directly from the soya bean and that makes it hard to digest. So it lands up doing more harm than good. It is better to include soya in ur diet in the form of milk, tofu, roasted nuts etc.
Since I have been told this, I add (sprouted) ragi flour to my wheat flour in 3:1 ratio (w:r). It is good for phulkas, parathas & chapattis (though the phulkas may come out a bit thicker than usual).

PS: Ragi contains about 6.7 % protein. Ragi protein is reported to be of good quality. Ragi is rich in methonine, which is an aminoacid lacking in most of the other cereals. Ragi is also found to have liberal amount of calcium. (Fm Bawarchi website)

I JUST WANT ATTA THAT IS GOOD TO USE AT HOME I AM CURENTLY USING GOLDEN TEMPLE AS I HAVE HEARD THAT IS HAS THE LEAST AMOUNT OF MAIDA, SAID BY A DOCTOR. BUT IF THERE IS ANY OTHER ATTA THAT IS GOOD ATTA PLZ FEEL FREE TO GIVE OPINION!
